Sanko Masamune, Hinokuchi Shiboritate Nama-nama-shu.
I'm still a sucker for freshly pressed sake.
They are so good.

Minogiku is a sake without mistakes.
It goes well with fish in general. Of course, it also goes well with soy sauce-based stew. Happiness, in any form, is to be satisfied.
Kuroryu, Gin no Tobira. My wife loves the color blue and bought this sake because she fell in love with the color alone.
It has a mild taste. The finished bottle is displayed with care.
My wife bought me a lot of one-cup drinks. One cup of super-dry Kinryo, a sake from Kotohira, my wife's hometown. I don't need anything. Just sake. I take my time and just enjoy the taste of sake.
I have about 6 brands of sake that I drank between New Year's Eve and today, but I have not been able to upload them at all.
For now, I'll start with "Ouma (Ikoma)" which I drank after my first visit to the shrine. It has a nice sharpness for those who like dry sake. Next time, I would like to drink it at room temperature, wouldn't you?
Every year in our family, we eat osechi or hors d'oeuvres flown in on New Year's Eve. A bottle of Kinryo, which we received as a tax return gift from my wife's hometown. I put it in a darkened sake cellar for today.
Yes, it's still good for the New Year.
I wish you all a happy new year.
A friend of mine on Facebook gave me a bottle of Inadahime, a specially selected Daiginjo, because it is delicious. It has a mellow texture, and we are looking forward to serving it tomorrow with osechi, which we think will go well with boned dishes.
On New Year's Eve, I was sorting through the sake warehouse and found a Tosatsuru that I was about to drink... it was also made in 2014... sorry... it had fermented quite a bit, but it became a different sake with slightly more sweetness.
There is still some sake in the sake warehouse that I haven't drunk yet, but all the rest were after 2021. Sorry, sake lovers.
Dear Makino Sake Brewery, Sorry everyone. While I was cleaning up, I found a bottle of Fujiyama special junmai sake limited edition that I bought last summer... out of the cellar.
I immediately opened the bottle and paired it with sashimi from Tokushima. The amino acid fermentation had progressed to a yellowish color, but it was delicious. It goes well with fish, but it also goes well with meat. It was a beautiful sake that soothed me after a long drive.
My wife bought me a bottle of Ishikawa Shuzo's Jukui (cherry blossom bottle) in mid-March, but after 9 months of refrigerator storage, it has turned yellow (amino acid yellowing). I am sorry to the maker, but now it's time for a sip. No, no, no, no, no, no, no, no, no, no, no, no, no, no, no, no. It is delicious. It's a little dry, close to the super dryness that I like. I want to drink it carefully, so I drank only 2 gou of it and put it back in the second refrigerator...
Pacific One Cup Honjozo from Ozaki Sake Brewery, Shingu City, Wakayama Prefecture
This is a Japanese SAKE with a sharpness that will surely make dry sake drinkers groan. It goes well with all kinds of food, but today I had a half-priced fillet of sea bream, so I grilled it with salt and toasted it with a toast. It was a moment of bliss.
Sakura Horyu (one cup) from Horyu Shuzo, Takahashi City, Okayama Prefecture.
It is fruity on the tongue, but a firm pungency also comes. My wife bought some expensive sashimi for a year-end party and drank alone.
The good thing about one-cup sake is that you can try it out. If I like the sake, I can buy a 720 bottle or a 1.5 liter bottle.
Minamiuonuma City, Niigata Prefecture
My wife's grandmother gave us a bottle of Shirataki Sake Brewery's summer-only ultra-harsh Uonuma.
She bought it for me at the end of the summer, knowing my taste (I like super-harsh), and it had been kept cold in the back of the refrigerator for a long time.
We enjoyed it with grilled iwana and amago (mackerel) that we had purchased in Shiga Prefecture.
It was a perfect evening.
At an early year-end party.
Hatsukasumi" Junmai Ginjo from Kubohonke Sake Brewery, Uda City, Nara Prefecture.
Oh no, this is bad. It's so easy to drink, and I keep drinking it. I finished 2 gou of it in no time. I basically love Yamadanishiki.
I had no idea there was such a social networking site, and I have probably had about 200 local cup liquors.
However, this is my first cup sake at Sakenowa.
Mie Prefecture is one cup of Hokosugi from Kawatake Shuzo. It is an easy-drinking sake with a slightly sweet taste. I prefer super dry sake, but my wife buys it whenever she goes on a trip, ignoring our preferences.
I received a bottle of Houe Celebration Zumigawa from the Nara Toyosawa Sake Brewery. It is a very sweet sake...I prefer very dry sake...so it is a little hard to drink. However, since it was a gift, I drank it with a proper taste 🍶.
It is a young sake without stagnation. Might go well with dishes that are a little strong in flavor.
I am a dry sake fanatic, but I am the type of idiot who drinks up all the sake my wife buys. Miyako Bijin does not go well with beef... 😢. I think it goes well with raw fish, grilled fish, chicken and pork.
I will post more tomorrow, but basically sake lovers, like Abu's mother (Shinji Mizushima's manga), only drink sake, and any side dish (atte) is fine.
