Second bottle of tasting. I asked for it 10 minutes before closing. The store owner laughed at me... smilies😅. This one also has a solid taste. I think it will not lose to sashimi or fried food. I wanted to drink slowly❗.

This time it is a special junmai sake from Hatsukasumi. This sake is from Uda, Nara Prefecture. This sake was brought back from a trip to the sake brewery cafe directly operated by the Kubohonke Sake Brewery and the sake brewery behind the brewery this winter. It has a slight yellow tinge. It is served at room temperature. The first aroma is sweet and raisin-like. It has a mild and moist mouthfeel. The taste is full of mature rice flavor with a sharp acidity and bitterness. Fully fermented, deliciously sharp body, delicious 😊Perfect for drinking at home. When I think of Kubo-Honke, I have an image of a sake that is either a pure yeast yeast yeast yeast or a solidly matured sake. When I ordered the fermented lunch (delicious 💕) pictured at the brewery cafe I visited, I was offered a choice of three different types of sake for my lunch drink in addition to coffee 😆. I thought, "What's this? I had the Ichihi Junmai, which was delicious and full of rice flavor. I also brought back a bottle of Ichibi, the Hatsukasumi brand from the sake brewery in the back of the building as a souvenir. Last week, while drinking Dobu Soda at Hatsukasumi Sake Brewery in Nihonbashi, Osaka, I remembered that Hatsukasumi, whom I brought home the other day, had been staying at home for a long time... Sorry, Hatsukasumi!

Hatsukasumi Unfiltered Nama Shu Junmai Fully Fermented 2022BY 15% 65 Purchased at a roadside station in Nara. Since 2016, they've been sticking to the namahashiroku style of sake making. Does that mean this sake is also a nama yeast? I like the acidity with lactic acidity. It is round but not heavy. I like the label on the back. I got a good one. The Katsuragi Brewery of Hyakugakumon and the Chiyo Brewery of Shinomine are said to be relatives of this brewery. Rating 4.2 (out of 5.0) 20230405

I had it cold at an izakaya (I dare not reveal the name) owned by the brewery. All of the sake here is crisp and delicious, with a flavor that is unbeatable whether you drink it heated, chilled or chilled (in other words, it is the opposite of the popular jizake).
