Dear Makino Sake Brewery, Sorry everyone. While I was cleaning up, I found a bottle of Fujiyama special junmai sake limited edition that I bought last summer... out of the cellar.
I immediately opened the bottle and paired it with sashimi from Tokushima. The amino acid fermentation had progressed to a yellowish color, but it was delicious. It goes well with fish, but it also goes well with meat. It was a beautiful sake that soothed me after a long drive.
