I drank this sake about 25 years ago and couldn't forget it for a long time (first love...). I've been looking for it since then, but I couldn't find it anywhere. I found it in a certain place and ordered it from the brewery. It has a very smooth and fine texture, and the taste is difficult to describe as a combination of acid, sweet, ripe and bitter. It seems to be more complex and mature than I remember... I'd like to leave it for about two weeks to see how it changes.

I still like Morinokuma-san at Eiko Fuji. It's not flashy, but full of flavor. As an origarami lover, I can't resist it😍.

And the excellent son (daughter?) Yamada Nishiki I never thought I'd be able to get my hands on a sake that I couldn't get my hands on since it was released this year... ❗️It's very soft and smooth on the palate, with the right amount of Yamada Nishiki aroma and elegant sweetness spreading through the mouth, and it has an extremely long finish after drinking. ...wonderful...sheer happiness... Next up was the Akita Sake Komachi. The aroma emerges from the cool mouthfeel, and then breaks off... I'd like to see a little more fullness, but I'm sure it will be a good match for those who like lightness...

We drank it in the afternoon with a comparison set. The taste of the rice spreads gently from the gentle mouthfeel, and it breaks easily. I love Kojo Nishiki after all. It has the same taste as Toyofuji rice.

It arrived on the 13th, and I let it settle at -3℃ for a week before opening it. You can hardly feel the rise in temperature, and when you drink it, the aroma spreads out with a soft touch, and the mouth is almost occupied by the aroma. It has a solid structure, so I would like to drink it after letting it sit for a while to let the aroma fade away.

I found it by chance and bought it. It's a very cosy junmai-shu. If you heat it up, it becomes a bit koji-like, so it's not very good. I'll drink it cold. The best heated sake of the year so far has been the snow of the Jizuhari Tsuru.

A special honjozo made with 55% polished rice. It has a slight ginjo aroma and a light umami type of rice flavor. It's perfect warmed up and served with Seko Gani 😊This is a great price...I'll buy more in a bottle 😆.

It's getting colder, and I chose this Honjozo for a heated sake. It has a unique richness that makes you anticipate a sticky aftertaste when you drink it, but it cuts right through... it's a strange feeling. I'd like to try it with meat, although I think the Jizuhari Tsuru I bought with the crab would be a better match.
