Slightly effervescent, the aroma fills the soft mouthfeel and the sweetness lingers for a long time. Purely delicious without any twists (compliments).
The day after opening the bottle, the gas was gone, but the impression was the same. The 805 I compared it to had a lesser aroma and a slightly heavier first attack. It would be interesting to warm this one up.
I wanted to try Kaze no Mori after all this time, so I started with the standard Akitsuho. I don't feel much of an uptake, but when I take it in, it's active, bitter and a bit of koji, with a grapey aroma and sweetness that spreads out and cuts through quickly. Leave it for a while and observe.
After 10 days of opening, all the gas has flown out and the aroma and flavor have expanded from an extremely soft mouthfeel to a nice, light flavor type. Delicious ☺️.
The apple-like acidity is quite strong and dominates everything. I wonder if this is what it really is. I'll leave it a little longer and see how it goes.
Four days after opening, the acidity has settled down and the balance has improved, but the taste is unique and hard to describe. This is delicious in its own way!
Slight ginjo aroma. It has a soft mouthfeel with a hint of lactic acidity and just a hint of rice flavor. The taste is similar to a thin wine. You can drink it as much as you like😁.
It is very soft on the palate, with sweetness, acidity and bitterness rushing in and out of the mouth. Sweetness, acidity, and bitterness rush in and out of the mouth and cut through it crisply, but it has a very long aftertaste. It's delicious.
It didn't have a fresh seal, so I kept it at 11°C. When I opened it up, it was active and shuffling... I'll have to try it again to see if this is what it should taste like...
