It is a Junmai Daiginjo made from Yamada-Nishiki and is very refreshing and easy to drink. It can be drunk by itself or in combination with other sake. It is a high-quality sake that is sure to be a luxury item.

Sake rice: 100% Hitokogochi grown in Nagano Prefecture Polishing ratio: Koji rice 55%, Kake rice 70%. Alcohol content: 15 I won again in a lottery at a liquor store near my commute to work! I had always wanted a bottle of Shinshu Kamerei. I had a chance to drink it, and it is still delicious! It was a little sweeter than the last time I drank it, and had a nice sharpness to it. I would like to drink it again and again, so I am looking forward to the lottery again!

At first I drank it with a meal, but it was more than enough on its own to satisfy my taste buds. I like the taste of Yamamoto no matter what I drink, so if I don't see something I normally buy, I try to buy it.

Sake rice: 100% Momota Rice polishing ratio: 45 Alcohol content: 16%. The aroma is gorgeous and the taste is mellow and umami, but it is crisp and clean. It is very satisfying to drink on its own or with a meal as it has a powerful umami flavor. Today I paired it with grilled fish and it was very delicious.

Rice polishing ratio: 55 Alcohol content: 15%. I bought this because the store I stopped by on my trip was a Yamato Shizuku distributor. When I opened it, it blew out like a carbonated juice and overflowed. When I drank it, it was very full and the flavor spread out. The carbonation combined with the juice made it go down as easily as a juice. It is very easy to drink and highly recommended.

Sake rice: 100% Hitogochiki produced in Nagano Prefecture Alcohol content: 16%. I bought this sake because I had enjoyed the 100% Shinshu Kamerei Hitogokochi before and saw that it was made from the same sake rice. I was impressed by its plumpness and umami, and it was easy to drink. The taste is not so peculiar and not so strong, but it does not change greatly in taste even if it is paired with a meal, and it goes well with anything.

Sake rice: 100% Aiyama Rice polishing ratio: 55 Alcohol content: 16-17%. The moment I opened the bottle, I heard the sound of carbonation. The aroma was gorgeous and the flavor was delicious. When you take a sip, the strong umami and gentle sweetness spreads over the entire palate, but the sharpness is good, and it disappears quickly. However, the lingering aroma lingered and it took some time before the next sip. It was a very elegant gem that was a hit with my taste buds. I will buy Houou Mita when I see it for a while.

As the label on the back of the bottle says, the sweetness and umami spread quickly when you take a sip, but it finishes quickly and elegantly without lingering. I think this sake is good with simple Japanese food, and is also a satisfying gem to drink on its own.
