Limited edition "Aizan Unfiltered Nama Sake" from Shigeya Shuzo, a sake brewer on Iki Island, Nagasaki Prefecture.

My favorite brand among the 12-14 varieties I drank was Kamo Nishiki's Kafuda Sake.
It was a super fresh sake, bottled exactly as it was squeezed, with a refreshing carbonation, softness on the palate, and juicy flavor.
This is a recommended place for all-you-can-drink sake that I researched on the Internet. I found out about it online and recommended this all-you-can-drink sake restaurant, where you can take sake from the fridge and fill your own glass. I was able to drink without hesitation. We went at the same time the bar opened and were able to open 4 new bottles in the 30 minutes we had the bar to ourselves.

Kameizumi after a long time. Really fruity.
This sake is brewed with Kochi yeast CEL-24, which produces a very gorgeous aroma, like ripe pineapple or muskmelon.
I served it with fresh crab miso that I bought at an antenna store in Toyama. The crab miso was also a 5 star.

Junmai Ginjo-shu is a junmai ginjo sake brewed to be an ideal sake in the mind, like a mirror reflecting the universe. Yamada-Nishiki 55% polished rice is used as the raw material. With an elegant aroma reminiscent of pears and green apples, it has a refreshing and pleasant aftertaste that spreads richly down the throat, and its clear umami leaves an elegant impression.
It was more fruity and refreshing than the usual crop.

2019 Junmai Old Sake. Aged in sherry casks.
After opening the bottle, the aroma is of chocolate.
I was taught that sherry is white wine to which brandy is added and aged in barrels to get that flavor.
I was surprised to learn that this sake tastes like this after being aged with rice, malted rice, and sherry casks.
It tastes just like regular sherry. It is a wonder I can't get enough of it.
I would like to recommend this sake to anyone who loves sherry to try it.
