A true melon pineapple! The lightly cloudy oriental flavor has a very nice balance of sweet, bitter and sour. It tastes perfect for this time of year. I thought it would have a punch of acidity like Senkou, but it was controlled and very delicious. Tomorrow, we will have the pink (red).

I chose this sake because I was in the mood for a refreshing drink. It has a muscat-like aroma. It has a matte and firm sweetness than I expected. But it disappears quickly, and after that, the gentle bitterness and sourness spread. This was my second bottle of Morishima, but I think I preferred the Yamada Nishiki Junmai Ginjo. I'm curious about the others so I'll continue to mark them. 😋

It's been a week since I've had my second vaccine and I've been down for a few days, plus I've been down since the vaccination. This is one of the bottles I chose after much hesitation. The taste of the rice is thick and clings to the palate. It has a bitter sweetness from the oregano. The overall volume of the wine made me feel completely energized. One more bottle for the day. 😋

When I told the staff at the shop that this was my first Kaze no Mori, they recommended me to try this one first. Fruity, sweet and bitter. There is a touch of swooshiness. I also liked the bittersweet taste of the No. 7 yeast. The amount of recipe information on the label is great for knowing the flavor. I thought that knowing the background and process of the brewing process would help me get a feel for the flavor. I'd like to try the others.

Aromas of muscat and melon, with sweetness spreading in the mouth at the same time. The acidity has a gentle lactic acidity. Compared to the Yamada Nishiki of Junmai Daiginjo, it seems to have a sweetness that precedes the acidity. The yeast was the same and it was Amami of Yamada Nishiki from a different region, but I feel that Junmai Daiginjo is better to match with meals. The Junmai Daiginjo has a more pronounced sweetness and umami both, so I personally thought it was the kind of sake I'd like to drink after a meal while chit-chatting. 😿The holiday has only just begun...

This is Tenbi's Special Junmai. It's been a long time since we've had a Yogo bottle in stock. It has acidity and a good sweetness. The astringent and slightly bitter taste is like a plum wine. Omachi has the same plum wine taste, but Omachi has 901 yeast and Kuro has 701 yeast. The rice is different, so maybe it's just my imagination...

I finally had a good time to drink it. Tenbi Day before a good night's sleep. It has a muscat-like aroma and a gentle swooshiness that is typical of Tenbi. It is sweet and bitter but very clear. Both the white and black are delicious, but the sweetness of the Omachi and Yamadanishiki is exceptional. I want to drink both of them again. I thought it was close to white, but it was a new type again. I wonder if the taste of the rice changes a lot...

I compared the Omachi I opened right after it was released with the one I just opened today. Naturally, the swooshing slight fizziness was gone, but I also felt that the sweetness was enhanced. My impressions of the freshly opened version, as well as my notes from when I drank it at the end of July, were, "Swooshing Muscat aroma. Bittersweet but sweet. There is also a slight hint of alcohol." But this time, it said, "There is a nuance of plum wine, and the punch of sweetness is amazing. The alcoholiness was gone. I don't know where it went, but I wonder if it would settle better if I left it for a while. Either way, it's delicious. Too good.

This is the second bottle of Gagakuyo to compare. The acidity and sweetness of this one are well balanced. After the lactic acidity appears, the sweetness comes softly. I can say that the sweetness of this sake is very good. It is difficult to describe... The one that is easy to drink is the Garakudai, and the one that is addictive might be the Tamakyo.

The other day, I had a chance to drink at Kanese Shoten, a corner bar in Nagaoka, and I had a Tenryo-bai (sake cup) Gagakuyo. However, I had a lot of sake before that day, so I bought it for drinking at home to enjoy it again in perfect physical condition. It's a Tamakyo, but it's dark sweet and has a lot of volume. You can feel a little bit of alcohol. When it becomes warm, the refined sweetness becomes round. Personally, I enjoyed the sharp sweetness of the nectar in the cold.

I was returning from a day trip to Niigata, so I had to drink this one to soak up the afterglow. Sour and refreshing. It also has volume. You can feel the acidity and the bitterness. The sweetness comes out when the temperature comes back a little more than a little too hot. This is a series of local plots made with rice produced in Niigata Prefecture, of course, but also in limited areas. I'd like to drink a lot of it to support the farmers and their efforts to revitalize the region.

After feeling the soft acidity, a slight sweetness and bitterness appear. And finally, the aroma swelled in my mouth. The taste of this sake is structured and three-dimensional. It's cool and refreshing, so it's perfect for this time of year. We only had one bottle in stock, but it was the right decision to buy it.

It's a Yamada Nishiki Junmai Daiginjo, and it's said to be suitable for long-term aging, so I thought about letting it sit for a while, but I gave in to my desire to feel the change in the comparison and opened the bottle. As it was said to be "light and dry", it was clear and sharp in the Kafuda-shu series, and compared to the Tsukihaku of the same tank number (No.183 ver.6) that I drank in March, the sweetness was suppressed and the impression became more smooth and clear. I wonder if it will become more smooth and clear with time... 🤔
