The 2020 is a smaller size (500ml) and is a good size for overnight use. The only problem is that it spilled and I lost almost 100mi. 😿 The lactic acidity is intertwined with a good amount of sweetness, and the strong fizzy feeling is irresistible. This one should be called a sake sparkling. It's the kind of sake you want to drink in the daytime. I recommended it to my friends.

Tsuchida Week. A hint of acidity invites you to approach the mouth. Dark and sweet toro. A full, rich and full-bodied sake. The longer you hold it in your mouth, the more you can enjoy the flavor. 99 is my preference over 12. Both are sakes I would like to repeat again.

I've been enjoying Tsuchida for the past few days. This is a natural brewery that does not use any yeast or lactic acid. They use rice with a milling ratio of 90%. Furthermore, it was a sake that I was too curious about: it was a native-production sake, and it was fire-hardened at room temperature. There is not much of an upfront aroma, and the taste is matte, heavy, and acidic. Powerful. The next day it seemed a little rounder, and I'd like to try it at room temperature a week later and warmed next time.
Compared to the rice and agave, the sweetness and acidity were both wild.
Actually, the Tsuchida 12 was so good that I repeated it. I finished drinking it without taking a picture or leaving a review. It has a soft lactic acidity and a gentle sweetness despite its alcohol content of 12. The sake has a nice flavor and is easy to drink. I really like it. The white koji type is also good!👍

Comparing FOMALHAUT's 2019 and 2020. This sake has sweetness, umami, and acidity all concentrated. 2019 has sweetness with a hint of bitterness, while 2020 has sweetness with a hint of acidity. The 2019 is bitter-sweet with a touch of acidity, while the 2020 is sweet with a touch of acidity. The 2020 is fresher and tastes more like Abeno Silver packed into a bottle. The lowest alcohol sake I have ever had. It has a sweetness and a malted rice taste like a mixture of lemonade and doburoku. It's not something you can drink easily, but more like a small sip. It was a very special taste. It's a bit extravagant, but it will be delicious if you boil it in Kakuni.

The yogurt-like sourness saves the sweetness well, and it is less sweet and bitter than True White, which is a good balance for my taste. If I had to choose between white and red, I'd go for the red. Well, I enjoyed both of them.
