I was returning from a day trip to Niigata, so I had to drink this one to soak up the afterglow. Sour and refreshing. It also has volume. You can feel the acidity and the bitterness. The sweetness comes out when the temperature comes back a little more than a little too hot. This is a series of local plots made with rice produced in Niigata Prefecture, of course, but also in limited areas. I'd like to drink a lot of it to support the farmers and their efforts to revitalize the region.
