This is a repeat of the sake that I chose as one of the 10 best sake of the first half of the year in 2021. This is my favorite of the different yeast series. It smells and tastes like muscat. It is a little powerful and alcoholic, but the sweetness and bitterness are perfect. It's still good. I looked at the last review I posted, but I had similar impressions, and it seems my ability to express myself has not progressed. 🙀

It's gorgeous and the aroma rises up. When you taste it, you think it's sweet like a green apple, but the sourness like a pineapple also shows up for a moment. After that, it disappears quickly and leaves a slightly crisp and spicy aftertaste on the palate. It is very unique. I'm frustrated that I can't describe the strong aroma I feel... I think I've felt this kind of aroma before with Ding's Natsuoori Garami. 🤔

What the hell is this? One bite and your mouth will be dominated. It's wild, it's rich, and it's really thick. It's a sweet syrup with a hint of miso. I think it's an illusion, but I also think it's sweet and salty. Mirin-like atmosphere. It is close to Shintsuchida. Personally, I preferred the regular 99, which I also chose as one of the 10 best sake of the first half of the year. I'm now convinced that Tsuchida is a cloying Jiro-kei when you get into it. I'll keep the other bottle 😋 until September 9 next year.

The rice polishing ratio is 90% and the temperature is a little low at 14 degrees. There is a powerful feeling of rice. You can also enjoy the sourness and sweetness of the lactic acid. It is said that Kabutomushi base is made by assemblage of several kinds of sake such as Bodhidoki. Again, it was delicious. My taste is also into it, so I hope UA Bespoke will keep the taste line in this direction. I'm glad I had two bottles. 😋

I've been waiting for this one to be released for a while now. The gentle and sweet aroma is inviting. The longer you hold it in your mouth without gulping it down, the more you can enjoy the lactic acid feeling. This time, it is the lactic acid moto brewing version of the standard junmai, but personally, I think it is so special that it is something else. By the way, it's really good. If you like the direction of the sake, you should try it.

It's been 203 days since I posted my 100th salmon. The pace is good. When poured into a glass, fine bubbles come up. It is not fizzy, but sweet, sour, and bitter. As the flavor on the label says, you can feel the pluminess in the sourness and the green medicinal herbiness in the bitterness.

Matte and sweet. The rice polishing ratio is 90, so it has a lot of volume. Like Aoto, it has a good balance of sweetness, acidity and bitterness and is easy to drink. Today we had it with Mapo Tofu which is as good as the volume. The trendy one of low rice polishing and low alcohol is also as good as UA!
