We obtained three bottles of Kuheiji from last year's hometown tax returns. Let's start with his place. It has a strong, robust, down-to-earth flavor with the acidity of ripe white grapes. Yamatoya Zennai has been on my mind for a while. I pulled it up from my parents' house because it was in a box of assorted sake sent to me by a relative in Fukushima. It has a sweet mouthfeel with a strong sharpness before it passes the throat, and a dry, spicy aftertaste. Overall, it is a nice, clean sake. It is a sake that can be enjoyed for a long time as it has a strong flavor that does not lose to strong accompaniments such as soba miso.

I had never seen a Kijoshu from Musical Instrument Masamune before, so I didn't hesitate to buy it. Hououmida's first Shiborishu. The fresh sweetness stands out while maintaining the excellent balance! When I drink Houou Mita, I think of a beautiful, high class woman, but this first Shibori-shu is like seeing a beautiful, matured actress's egg debut from the very first ingredients. I would say that she is already beautiful, but I feel a little bit of freshness. I am sure I will drink many bottles of Houou Mida this year.

I started drinking sake when I drank a bottle of Yukino Kayasha at my favorite soba noodle restaurant in my neighborhood. Thinking back, this was probably the first time I drank a good cold sake. It seemed to keep well at room temperature, so I bought it and kept it at home for a while, but I hadn't had it for a while, so I opened the bottle. It had the same mild sweetness, moderate acidity, and bitterness that impressed me when I first encountered it. Japanese sake is of such high quality.

I took a break from Collage and bought a bottle of Nabeshima New Moon last week. It is so perfect that it is hard to believe that it is freshly pressed. The silky mellowness, spiciness, full sweetness, slight sourness, and pleasant bitterness are all in perfect balance and are the most delicious. I have the impression that most Nabeshima needs to be laid down for a while before it opens up, but this one is delicious right out of the bottle. I wish I had bought another bottle!
