It has acidity, but I felt it was well balanced with the sweetness and bitterness of the rice. The aftertaste is not very long and one can drink a lot.
The sweetness and umami of Yamada-Nishiki is well expressed in this bottle, which is typical of Mimuro-Sugi. The mouthfeel is satisfying, yet not cloying, making you want to take another sip.
First fall deer in my life. I was surprised. The umami and the aftertaste were wonderful. I know I am completely prejudiced, but this is Osaka's sake, and I was made to reconsider the high level of the sake.
