We are having Tazake Yamahai-brewed sake.
It is a delicious sake. It is soft to the taste and has a nice sharpness. It seems to go well with dishes that are a little strong.
Commemorative project for the 100th anniversary of the Yamauchi Toji Association: "Fusion of 100-year-old yeast and modern Akita-style ginjo brewing!" This is one of the special commemorative sake made by 10 breweries using 100-year-old yeast and 10 different production methods and techniques. I really wanted to compare 10 bottles, but that was not possible, so I bought one from my favorite sake brewer, Yamamoto Sake Brewery.
Of course, I have never drunk sake made 100 years ago, so I cannot compare them, but I think the fact that the sake is so easy to drink is a result of modern technology.
It has a strong aroma, a slight sourness, and a sharp taste.
It is very tasty.
This is the first time I have had Hanami Romain.
Usually in my area in the northeastern part of Japan, cherry blossoms are in full bloom and cherry blossom festivals are held during GW, but this year the peak has already passed and I am having Hanami sake for Hanami at home.
It is low-alcohol and easy to drink. The refreshing sweetness spreads on the palate, and I wish I could have enjoyed it while viewing the cherry blossoms.
But we also enjoy it at home.

Laughing Shiki Theater: The Night Before Revolution. I was told that this is the "Laughing Shiki Gekijo" series, which means that the same product will never be released again. I have never had any other sake before, but it has a mild, moderate sweetness and a fruity aroma that escapes through the nose.
We are having Yamato Shizuku Mimosa Yellow tonight.
The label is a gorgeous yellow, and I naturally picked it up at the liquor store because I felt that the long winter was finally over.
It is made from 100% "Momota," Akita Prefecture's original rice suitable for sake brewing. It has a melon? The flavor is like melon, and the aroma is like strawberry. The aroma of melon, strawberry, and strawberry-like flavor is very good. The taste that remains in the mouth after drinking is just like after eating strawberries. It's a wonder.

This is Mitsuo Yamakawa 2023 Haru. We will have it for the first time.
The 25th edition is from Yamagata Masamune's Mitobe Sake Brewery.
The theme for 2023 was "collaboration with fermented foods," and this sake was a challenge to pair with yogurt-based dishes.
The sake was made with white malted rice, so I wondered if it tasted like Shinmasa's "Flax Cat". We enjoyed it with the thought that it might taste like Shinsei's "Flax Cat".
It has a moderate acidity and a slight white wine-like aftertaste.
It is a very drinkable and tasty sake.

I have had a Lemon before, but it was very much like a Lemon. This "Strawberry" is like a thick "strawberry smoothie" and is very sweet and delicious. The alcohol content is about 5%, so it was almost like a juice and was gone in no time.

When I saw the image for the first time, I thought "This is so cool! and "Well, I guess I'll never get it..." at the same time. and "Well, I don't think I'll be able to get it," came to my mind at the same time, and I gave up hope of ever getting it. However, when I was paying for the sake at the cash register of my regular liquor store, the owner asked me, "Do you drink Niimasa? I replied, "I love it! I replied "I love it!" and this sake came out, which made me shiver with surprise and delight.
A little over a year has passed since then. I was thinking about when I would drink it, but the bottle fell over and the lid broke! I couldn't stop the shwash anymore and decided to open it on a normal day. I couldn't stop the sizzle, so I had to open it on a normal day. I was both "what can I do..." and "finally, this is the time..." In the end, my excitement won out.
When I poured it into the glass, it was like a strong carbonated drink. When I put it in my mouth, I said, "Sweet! Delicious!" I can't stop. I can't stop drinking it. I don't like sparkling wine or champagne, and I only drink them when I attend weddings, but this is nothing like them.
I can drink too much! I will live to see another encounter like this again.

Rice and Grapes - Koshu - by Rice and Agave Co. This is a brewery that has been the talk of the town for its craft saké. I have had Inato Hop and Doburoku before, and they were also very tasty, so now grape? I thought, "Is it wine-like? I thought so, and bought it.
I can drink most alcoholic beverages, but wine is too sour for me, so I thought I might not enjoy it this time, but once I took a sip, I couldn't stop.
It looks like nigori sake. It is not at all sour or astringent like wine. Just the right amount of acidity and grape sweetness. But it also has the taste of sake, and I can only describe this as a new kind of sake.
Even those who don't like sake can gobble this up. 500ml will be gone in no time.
The snow has melted away and spring is just around the corner, so we enjoy a glass of "Yukidaruma.
When you open the bottle, you will feel a "psshhhh" sound, and when you pour it into a glass, you will feel a "shwashhwah" sound. It has a sweet taste like a carbonated lactic acid drink, with a slightly sour and slightly bitter aftertaste.
It was so easy to drink that more than half of it was gone before I could post it.

Kuribayashi Shuzoten Harukasumi Chestnut Label White.
It is a limited edition sake brewed with Akita Sake Komachi and Kameyama yeast, a yeast isolated from the brewery.
When you take a sip, you will find a slightly smooth texture and a mild sweetness. The aftertaste is also nice with a slight bitterness like grapefruit.
It is very tasty.
