It is gentle on the throat, but a deep cup that makes your mouth hot and curdled!
Eiko-Fuji has a sweet image, but for me it feels a little dry.
On the palate, there is a hint of sweetness like a pear, but it feels hot on the nose and down the throat.
This sake is made from "Hashu Homare," a sake brewing rice produced in Yamagata Prefecture, which gives it a complex flavor that cannot be experienced anywhere else!
Unadjusted unrefined sake aged in the brewery!
Very fruity for a Takachidai!
It is so light that it is hard to believe that it has an alcohol content of 16%!

This year's flavor was... more crisp than in previous years, and this year I felt a stronger sense of cleanliness than sweetness!
I felt that every year it is becoming more refined and has a sharp taste despite being lightly nigori (light nigori)!
I am also looking forward to next year's brew!
Sake made with edible rice "Fusakogane" produced in Chiba Prefecture!
Although it is edible rice, the sweetness of the rice is as good as that of sake rice, and combined with the fact that it is unfiltered raw sake, it gives this sake a rough taste!
