I think this may be the first time I've had fire-aged Kangiku? Perhaps because of the fire-roasting, the gorgeousness typical of Kangiku is a bit subdued, but I also felt a subtle gaseous sensation. It also has a slight citrus acidity.

This is amazing! Is it sake? It's like, "Is this sake? In the mouth, sweetness like rum or raisins and a delicate bitterness hits you. It has a complex umami taste with a slight whisky flavor.

When opened, it has a limp banana feel. As the day goes on, the citrusy, fresh flavor reduces the bitterness of the sharpness, and it flows nicely with meals.

The aroma is gorgeous and muscat-like, as it is from the same brewery as Jikin. When you drink it, the sweetness is much more subdued than the aroma. This is delicious in its own way.

It seems to be a local brand in Nishinomoto. It is quite yellow in color with a sense of maturity. It has a sweetness similar to that of kijoshu, and the mouthfeel is mild.

I thought it was kind of hard to describe, but as I got used to it, I thought it was the way to go. I think the slightly purplish color and the grape-skin-like red wine-like astringency bring a sharpness instead of bitterness.
