Fukuwakura Junmai-shu What a surprise, Imuraya, famous for their azuki bars, made sake, so we bought some! The sake brewery is located in VISON, a resort facility in Mie Prefecture, and there is an eat-in space inside the store. I somehow imagined a sweet sake from the image, but it was fruity and definitely sweet, but also very easy to drink with a mild acidity. I drank about one cup, so I will drink it again after leaving it for a while.â

Sogen Shiboritate Nama-no-Hara Sake I was allowed to drink it at a corner shop of a certain liquor store and thought it was delicious. It tasted sweet and rich. It tastes sweet and rich, has a nice aroma, and is easy to drink. However, the alcohol content is 19%, so it is dangerous if you drink too much. Sogen has been working on some interesting projects, such as using a tunnel that used to be used by the "Tono-Railway" as a storage facility, and is a sake brewery to keep an eye on.

Mai-bijin Yamahai Junmai Ginjo Unfiltered Nama-shu R1BY I was torn between this R1BY and H29BY, but the brewer thought it would be interesting to compare this and sanQ, so I decided to buy them. Well, this one is also very Mai-Bijin-like! Perhaps because it has been aged for a year, it has an even richer and more expansive flavor than the earlier sanQ. The sourness of the Mai-Bijin gives it a fruity flavor, but this one has a more diverse taste. It goes well with sashimi, but it is also a good match for Western-style dishes such as cheese dishes. In other words, the flavor is so good that it does not lose to the dish at all. This is delicious. I will definitely buy it again.

Mai-bijin Yamahai Junmai Unfiltered Nama-shu sanQ This is a series to record the sake I drank during GW. Mai-bijin is a sake from Fukui, which I happened to drink at Ueno and was interested in recently because of its impact. It has a punchy taste that is the complete opposite of the easy-drinking sake that is all the rage these days! The sweet and sour flavor comes with a bang. Oh no, it's sour! But delicious! LOL! If I were to ask if I could recommend it to others, I can't. lol But if you are interested in it, you should try it at least once. It is a hidden masterpiece.

Matsuzaki Shuzo Hirotogawa Junmai Nigori Nama Sake I had the opportunity to drink a nigori version of the popular Hirotogawa. It is a limited edition sake that is only available in winter. Slightly fizzy, fragrant and fresh melon sensation. Delicious!

Tenryoibai Sake Brewery, Garakudai Tamakyo Raw Sake This is one of the bottles that the brewery's head brewer claimed to be the best ever. You can't help but drink it! It's sweet and chunky, with a rich aroma and a mellow sweet taste, as the brewer said her image was of Anna Mizuto. It's delicious! Fish goes better with it than meat, but it also goes surprisingly well with kimchi and cheese. I wanted to see how it tasted after a few days, but I finished it in one night.

Tenryo-bai Junmai Ginjo Shiboritate Nama Genshu I heard that it is only available in Niigata Prefecture and is hard to find in other prefectures. It's full of flavor, but with a crisp acidity that is exquisite. I want to drink it again.

Tsuru no Tomo Kamihaku Sake from Uchino, Nishi-ku, Niigata City. This sake tastes great at room temperature or hot, and it's less than 1,000 yen for a four-pack. It's one of the best for everyday use, isn't it?

Jizuhari Tsuru Freshly Squeezed Raw Sake A whopping 20 degrees of alcohol! Although the alcoholic sensation is tremendous, the flavor remains so strong that I can't stop drinking it. I really want to drink this again next year!

Shichiken Yamano Kasumi SPARKLING SAKE This is my first time drinking Shichiken sparkling sake. I found out that they make a variety of sparkling sake other than Yamano Kasumi! Although this is a sparkling sake, the carbonation is not strong, and the sweetness and flavor that comes through the nose is very pleasant and makes it easy to drink. It's a sake that can be used in a variety of dishes and situations.

Garyubai Limited Hanpukai 2021 This program started in April, and the two bottles for April arrived, so we tried them. Because the rice used is different, the taste and aroma are completely different. I drank them immediately. First, the Yamadanishiki flavored sake. It has a nice fruity aroma and sweetness like Garyubai. Next is the Sou no Jyoushi made with Gohyakumangoku. This one has a clean taste with no unnecessary ingredients, but it still packs a punch. I was able to enjoy the difference in character. We had it with sushi and pickled firefly squid, and it was perfect.

It is just like a sake made by a winery. It's fruity and immerses you in a fantastic world. I enjoyed the cheese and sakutome as a snack, but I'm not sure if that was the right choice. Next time you drink it, you should consider pairing it with something else.
