#Omachi
#Making with Bodai Hashiroshi
This sake is made with a very rare method called "Bodhi Hashiwake".
It is a very sharp sake with a slight carbonation feeling.
#Omachi
Ishizuchi" is now one of Ehime's most famous sake.
I was amazed by the indescribable complexity of the acidity, which is one of Ishizuchi's characteristics, and the fullness of Omachi 😲.

#Sakeya Manryu Limited
Jokku" came out with Kaiun.
Mutsu Hachisen is a popular sake from Hachinohe, Aomori, and it is delicious.
This one is also refreshing and went perfectly with the tuna sashimi 😋.
#Akaban Oumachi
Participated in an event at a liquor store of an acquaintance.
This time, the main lineup is "Omachi".
The first one was "Kaiun".
It is refreshing, but also has a full-bodied taste that is typical of Omachi.
Raku-fu-mai. Sake rice.
They say it is also suitable for Awamori, but I haven't had Awamori for years!
This sake is refreshing and has a strong acidity.
The dragonfly on the label is dusty. ☺️
I went to my favorite Japanese restaurant for the first time in a while and was served a sake that the owner said was "personally the bonanza of the year".
It had the flavor of a Junmai Daiginjo, but with the crispness of a pure sake, and a wonderful aroma that lingers in the mouth. This is indeed a great sake.
I was happy that my colleague (Australian) who went with me was extremely impressed with it 😊.
I am not a person who can taste, but the moment I drank it, I felt "Gohan! I felt "Gohan! Is it because Nikomaru is edible rice? 🤔.
It has a delicious flavor, but it also has a sourness. I think it is perfect as a food sake.
Tonight's entrée was red squid sashimi and spicy hot pot for some reason😅.
As for the sake pairing? But it was delicious tonight too.
Today, the wife prepared the first grilled saury of the season for dinner, so we hurried to the local supermarket to get some hiyaoroshi to go with it 😊.
It's good to taste seasonal foods for both sake and snacks ❗
#I feel like I'm writing a diary 🍶🍶. 😰😰.
Refreshing aroma and flavor. It is good when you want a refreshing drink.
I had a preconceived notion that "Kyushu = shochu," and in fact, I had never had much Kyushu sake (I think I only remember Nabeshima and Tanaka Rokujugo...). I had a preconceived notion that "Kyushu = shochu" and had never actually drunk much Kyushu sake (I think, I only remember Nabeshima and Tanaka Rokujugo). So, I'm sorry for taking it so lightly.
I'll try to discover more Kyushu sake next time 🙂.
By the way, today's accompaniment was yakitori.
It is a sake rice variety registered by Hakutsuru.
We also had the "Sake Mirai" version developed by Takagi Shuzo, well-known for Jyushiyo, and both were delicious 😊.
#Raw Rice: Domaine Sakura, 100% Yamadanishiki
#Polishing ratio : Koji rice 50% Yamadanishiki / Kake rice 60% Yamadanishiki
#Alcoholic Beverage: 14%.
It's been a long time since I've had Chikyu. It's still delicious. It's been a while since I've had a good one 😋.
It seems to have a more robust flavor than usual, perhaps because we have been drinking a lot of light and refreshing sake recently.
Today's accompaniments are super discounted sashimi and maitake mushroom tempura. I think I would have preferred something simmered to go with this sake.... 😅😅
Well, I'm satisfied now 😁.
I often drink it at restaurants I know, but this was the first time I saw it on display at a liquor store.
The alcohol content is 13 degrees, which is low for sake.
It has a fruity aroma and moderate acidity, making it an easy-drinking sake.
Today it was accompanied by maitake mushroom soup and cheese salami 😋.
It is locally produced and consumed in Chiba Prefecture.
It is a sake with a 15% alcohol content, but it is an unfiltered sake, so it has a very robust flavor.
*Drink plenty of water with it👍.
I think it goes well with today's entrée of fried or grilled food such as fried shishamo fish and jakoten (fish cake).
#Sparkling Sake
#The rice is "Gin no Yume".
I thought it would be a sharp sake without sparkling (carbonation). I think it would be perfect for the current hot season.
Personally, I would have liked to drink it as a regular sake instead of sparkling. 😃
