I thought Junmai Dry was not my taste, so I don't often buy it myself.
At first it was cold and I felt the rice to the fullest! It goes well with the sweetness of the sweet potatoes on the menu. It would go well with horse sashimi, but I think it would also go well with toro or something warm and sweet.
When I heated it up, it became mellow and easy to drink. It's totally fine on its own!
It has a bitter or thick taste at first, but because it is a daiginjo, it has a pleasantly fruity aftertaste. It is a sake that can be savored well. It goes well with canned mackerel with olive oil and rock salt. The mackerel's greenish taste matches the bitterness. The strength is just right.

I don't think it's the so-called apple type. It has a sweetness to it. But I don't feel it lingers on the palate. It's delicious. No bitterness.

It's very acidic and strong. I can feel Kouei Kikumi. It's a great sake!
I think it would go well with stir-fried pork and mushrooms.
