Last in the series of different rice. When opened, it has the same fizzy & fruity feel as before. The next day or so, the taste became more apparent, and this time it was like a CC lemon. It is not as sour as a lemon, but the sweetness is like that. Maybe the color of the label is giving my taste buds an impression of the flavor 😂. Four bottles worth the high price, thank you very much!

This is the third in the series of different rice. This time, even though it was just opened, the fizziness was not as strong as last time, and it had a peachy sweetness, almost like cider. Although it can be drunk as a food wine, its subtlety is blurred, so it is better suited for drinking by itself in a relaxed atmosphere. We can only hope what the last Yamada-Nishiki will taste like.

This is the second in a series of different rice from Amami. June's was Hiroshima Senbon Nishiki. Like the first bottle, it had a strong fizz and bitterness as soon as the bottle was opened. After a few days, the taste became more apparent. I think the image of the green label is affecting my taste buds, but I enjoyed the fruity taste with a melon-flavored aroma and moderate tingling sensation.

As I said, Tenbi is delicious! It has a freshly opened, tangy, fizzy, sharp mouthfeel with a clean bitter aftertaste that lingers. It was great as a food wine. This Junmai Daiginjo series with a difference in rice is released every month in the following order: Okayama (Akaban Omachi), Hiroshima (Hiroshima Senbon Nishiki), Hyogo (Banshu Aizan), and Yamaguchi (Choshu Yamadanishiki). It is not sold at the liquor store near me, so I have to buy it during my business trip to Tokyo, but I wonder if they have it at the right time... Postscript. The 3rd day after opening the bottle. The fizziness is gone and the bitterness has changed to a soft sweetness. The deliciousness has increased further.

This year, I had moved and was afraid I would not be able to buy it, but miraculously I was informed of its arrival when I was on a business trip at the right time and bought it. I had heard that this year's wine was especially delicious. It was indeed delicious! But I was a little sad to find that it was too elegant, and its unique noble aroma was reduced.

It has no special characteristics, but it is an easy-drinking junmai ginjo that is just like a junmai ginjo in my opinion. Although I don't think I would repeat this sake because of its lack of characteristics, it was a very good choice if it was served at a restaurant.

I was able to drink it again this year because it is a local (my parents') sake. It has a good taste of rice and a moderate bitterness, so it does not fight with rice. When I was a kid, I had the image of Banafishop as a "store" at the entrance of the Prefectural Central Park, but as an adult, I found it to be a store that deals in mysteriously good sake.

I bought it because of its limited edition packaging. The newspaper it was wrapped in was also the Citizen Times. It was a basic, delicious Junmai Daiginjo sake with a juicy aroma.

It is said to be a sake from Shimonoseki, Yamaguchi Prefecture, and this was my first time drinking it. The taste is fresh and clean, with a strong aroma. The color is a light blue. When I thought it was similar to Wakanami, I found out that, like Wakanami, this sake was made by a female toji. If you drink it by itself, the aroma is delightful! On the other hand, if you try to match it with food, it is difficult because it has a miscellaneous taste that I don't know where it comes from.

I was able to compare the True White & Red of Kankiku, which I was looking forward to. Both are made from 50% polished Omachi rice. Red: Origari based on the theme of "Love", the language of the red chrysanthemum flower. White: A version based on the theme of "truth", the language of the white chrysanthemum flower. White: A version of white chrysanthemum with the theme of 'truth'. I had a preconception that it would be red and white like wine, but it tasted completely different. Red has a gentle taste, just like the theme of love. It has a fluffy aroma like Shine-Muscat, and then a fruity taste with a slight swooshiness at the entrance, which is the strength of Kankiku. It went in smoothly until the end. The lees seemed to block out the miscellaneous flavors, and it was possible to taste it without any unpleasant parts until the end. White, on the other hand, has a slightly less fruity and more transparent entrance. From there, there is a sense of rice flavor and a faint bitterness. But when I thought about it in light of the theme, I couldn't describe it well, but I thought that the affection wasn't just there from the beginning, but that the taste of the truth (White) was gently wrapped in lees, and then it became the taste of the gorgeous affection (Red).

This sake is made from "Comet", the best rice for sake brewing in Hokkaido. This is the second Spring Market Limited Edition, and I drank it for the first time. Instead, I missed drinking Violet Ruibuki this year. At first when you drink it, it is fruity like Eikoh Fuji, but at the end a slight dry flavor comes up. If you drink it by itself, I think it's best not to chill it too much so you can feel the flavor. However, when I casually drank it with sushi, it went very well. I once heard that it is difficult to find good sake in sushi restaurants because the flavors of the sushi and sake fight each other, and I thought that was true. With this Eikoh Fuji, the aftertaste is crisp and clear, so the taste of the sushi is not dulled. In fact, the initial flavor seemed to expand the flavor of the sushi nicely! I'll have to give it another try next year!

This sake is made with wine yeast. I know I'm biased, but wine yeast = sourness like white wine! so I didn't have a good image of it. I wanted to be adventurous, so I bought this one, but it wasn't what I imagined, it was more like a red wine with a lot of weight. The bitterness that it has may be an astringent taste! It is a new feeling. I'm not sure if it's a food wine on its own, but I'd like to try it with steak next time.

This sake is made from rice grown in Chiba Prefecture, with So no Mai cut down to 29%. From the label, you can see the 'X' reflected on the surface of the water in Kujukuri and it looks wonderful. It's a bit expensive and tastes as good as the super limited edition it's named after. The freshly opened aroma was also surprisingly fruity. This is the best level I've ever enjoyed before drinking. The taste is slightly sweet with a clean aftertaste, so it's best to drink it on its own rather than with a meal. It's the first time I've ever felt like I was wasting my time by drinking it with rice, and it's a delicate sake with that kind of flavor.

I was excited to discover something new. I had no idea that the word "bird" meant "crane"💦. I've never heard of it before. The aroma is Senkou, but the acidity is low. The aftertaste is clean and very easy to drink. If it's too cold, it's too light, so it's better to return it to room temperature.

This is the drink that makes me feel spring the most. I started drinking it when I was 41 years old and it's been 5 years now. However, this year's seems to be less refreshing than last year's... I wonder if my taste buds have changed. The bitterness in the aftertaste is stronger, and there is a sense of gravity, and I feel that it tastes similar to the higher-ranked Yamada's tighter version, but I feel that the spring version was more light. It may change after a few days, so I'll enjoy the change.

Assemblage Miracle Assemblage...it's so stylish that I just want to use it anyway lol That's why I was able to drink it again this year! It is characterized by a depth of flavor that allows you to enjoy the changes in taste from the moment you drink it to the moment you finish it, but I think you can taste it best when you drink it as a food wine. If you continue to drink it on its own, you will feel the bitterness on the palate, so you can reset it with rice and drink it again to feel the taste.

It was a very soft and gentle sake. It's like Nacchan in the image. For better or worse, there is almost no sake feeling. It's made to be easy for anyone to drink, so I think it's the best match for drinking with everyone on a sunny day. I think its strength is that it has no miscellaneous flavors, so I have to drink it quickly before it deteriorates.
