I was able to compare the True White & Red of Kankiku, which I was looking forward to. Both are made from 50% polished Omachi rice. Red: Origari based on the theme of "Love", the language of the red chrysanthemum flower. White: A version based on the theme of "truth", the language of the white chrysanthemum flower. White: A version of white chrysanthemum with the theme of 'truth'. I had a preconception that it would be red and white like wine, but it tasted completely different. Red has a gentle taste, just like the theme of love. It has a fluffy aroma like Shine-Muscat, and then a fruity taste with a slight swooshiness at the entrance, which is the strength of Kankiku. It went in smoothly until the end. The lees seemed to block out the miscellaneous flavors, and it was possible to taste it without any unpleasant parts until the end. White, on the other hand, has a slightly less fruity and more transparent entrance. From there, there is a sense of rice flavor and a faint bitterness. But when I thought about it in light of the theme, I couldn't describe it well, but I thought that the affection wasn't just there from the beginning, but that the taste of the truth (White) was gently wrapped in lees, and then it became the taste of the gorgeous affection (Red).
