As I said, Tenbi is delicious!
It has a freshly opened, tangy, fizzy, sharp mouthfeel with a clean bitter aftertaste that lingers. It was great as a food wine.
This Junmai Daiginjo series with a difference in rice is released every month in the following order: Okayama (Akaban Omachi), Hiroshima (Hiroshima Senbon Nishiki), Hyogo (Banshu Aizan), and Yamaguchi (Choshu Yamadanishiki). It is not sold at the liquor store near me, so I have to buy it during my business trip to Tokyo, but I wonder if they have it at the right time...
Postscript. The 3rd day after opening the bottle.
The fizziness is gone and the bitterness has changed to a soft sweetness. The deliciousness has increased further.
