Chamomile Peppermint Lemon Barb Mountain mint Apple mint Spearmint Japanese peppermint ⚫︎ Alcohol 7% This year, things are minty! Amazingly fruity and refreshing, with a wonderful aroma. It is so delicious that it overturns the concept of doburoku!

Shiga "Happy Taro Brewery Happy Doburoku Dry Taste Compared to the limited doburoku, this one is crisp and has a strong sake taste. It is also good with lemon, soda, or warmed sake. This is the first sake of 2023, and a perfect bottle for the New Year.

[Process] Citric acid malt sweet sake yeast (made with whole malt and soaked in Akamaru Usuki) [Rice] SHIBATA GROUND MUSIC Thank you rice (Nagahama City, Shiga Prefecture) [Akamaru Usukari] Rinnesha Corporation (Cultivated at our own farm in Takigami-cho, Monbetsu-gun, Hokkaido) This doburoku has a refreshing light flavor, but also has a strong depth. ⚫︎Tataki bonito ⚫︎Tuna and Paprika with shiso and ginger

Today I paired it with sautéed chicken with rosemary☺.

Shiga "Happy Taro Brewery Brewing No.012 something happy herb tea" Doburoku ⚫︎Rice : "Shiga Asahi", home-grown for 30 years, no fertilizer, no pesticides ⚫︎Citric acid malted rice : Hishiroku Shochu White Koji No.198 ⚫︎Herb : Kajitani farm Lemongrass Mexican marigold Mexican marigold Japanese peppermint Apple mint Peppermint ⚫︎Alcohol 6% (seems to finish a little higher than No.011) Shockingly tasty doburoku with herbs as the main ingredient. It uses fresh herbs from "Kajitani Farm" in Hiroshima, which is said to be a favorite of chefs from around the world. The refreshing aroma was wonderful, and the bouncy acidity, refreshing effervescence, and throat hit made me drink too much of it. "It is full of citric acid malt, and although the sugar content is high, the acidity is strong, so it is tailored to be drunk with a sweet and sour pop." No wonder they call it "sweet and sour with a pop". It seems that this is the last production for this season, and the next one will be around May next year. The name means "divine" in Italian. The water is from Mt. Miwa, known as "water of the gods," and is made from Yamada-Nishiki with a milling ratio of 60%. It is a single shot, unfiltered sake with an alcohol content of 13%.
