On first open, mushroom/umami on the nose, plum and melon/apple on the palate. Very smooth texture. Stone and mineral on the finish. A nice drink. 8/10

Bullwinkle, nice to meet you ☺️ This is another product of Matsunotsu no Kotobuki that I had the other day, and I found some mushroom and forest-like flavors in some of the flavors.Bullwinkle's comment reassured me.

Wonderfully soft and delicate on first taste. Smooth, dry, mouthfeel; no burn; notes of mushroom, forest, moss. Definitely one of my favorites so far. 9/10

Quite flavorful at first open with heavy mushroom umami qualities. Left it overnight and found it much softer and more pleasant the second day. Melon, sweet potato, and a long finish. Very nice once opened for a bit. 8/10

Very different than most. Bright intense acidity and citrus/yuzu on the palate. Funky and spicy, likely from not being pasteurized. Clean finish. 6/10 on the first taste as it is not really my style.

Had this again as I forgot I had already tried it (which, funnily enough, is why I got this app!) and was pleased. On the initial open at room temp it has a forward nose and a strong, almost mushroom umami flavor. Very smooth and soft texture. I believe my previous report was likely from a very chilled bottle but all in all this is a nice drink.

Well so far I've tried to explore Japanese sake only and avoid US based producers, but this one was given to me. All in all its not that bad; smooth, flavorful, dry. A nice drink.

Really quite nice the second day it was open. It was a bit tight on the first drink but the next day softened well and I got a lot of melon on the palate. 7/10

8/10. Light and crisp mouthfeel; a bright flavor either good depth; a bit of heat on the finish but clean. All in all an excellent offering for my palate.
