The aroma is completely different from regular ginjo-shu. What is this? It's a strange aroma, but delicious. I don't think it's close to what they call a cemedine smell, but I don't find it that off-flavorsome.
The sweet and gentle fragrance is soft and fluffy. The stylish label and the warm and lovely spring scent are just like the concept. The fragrance is quite distinctly on the sweet side, so it may be to some people's liking, but that's the concept, and I really like it all together. It is a total work of art. The aroma is sweet, but you don't really feel the sugar, so it's easy to drink.
I feel that I can sense a strong aromatic component that is different from the apple-like aroma I often sense in sake with a strong ginjo aroma, but I don't know what it is. I would like to learn more about it.
The hops are obviously there in the aroma and in the bitterness, and it's amazing...! It has a strong acidity and a slight effervescence, reminiscent of Saison Farmhouse Ale. If it didn't have doburoku's unique texture and rice flavor, you wouldn't even know it was sake. It is not as intense as a stiff sour ale, so it is quite unique but easy to drink. The choice of hop varieties, Citra, Idaho, and Sabro, is also good, in the style of today's craft beers.
