The hops are obviously there in the aroma and in the bitterness, and it's amazing...! It has a strong acidity and a slight effervescence, reminiscent of Saison Farmhouse Ale. If it didn't have doburoku's unique texture and rice flavor, you wouldn't even know it was sake. It is not as intense as a stiff sour ale, so it is quite unique but easy to drink. The choice of hop varieties, Citra, Idaho, and Sabro, is also good, in the style of today's craft beers.

Hop Doburoku from Pukupuku Brewery. Aroma of hops and strong acidity. The sweetness of rice comes softly at the end. Interesting taste!
