Ezo Fuji, Mt. Yotei. It is a sake brewed by Hakkai Brewery in Niigata with "Comet" rice grown in Niseko Town. It is a type of sake that is served with food 😋. It is a combination of strawberry, melon, banana, and banana. I drank it easily because of its freshness and subtle sweetness😅.

Oomon no Yume Yamahai Junmai 🍶. First of all, it was served cold. It has a ricey feeling as if it were made from raw rice. It has such a ricey feel. It's definitely delicious warmed up. And then heated sake. The attack is a "thud" from the rice and unhulled rice, and the umami increases as well as the original spiciness. The acidity (organic acid) is also present in the back. It's like, "This would be a winner if paired with salted salmon" 😍. It's like rice when it's cooled down. It can be paired with anything. This day I paired it with adult potato salad. It was the strongest level and went well together 🤤.

The aroma is very "nihonshu-🍶". I think it is a normal sake, maybe 🤔. The attack is mild. Then, umami of rice and a little spiciness. And the aroma of alcohol passes through the nostrils. I had it with a hamburger steak sold at an industrial supermarket. It was like a reset for my meaty mouth 😋. When heated up, various organic acids? The natural sweetness of the rice is a daily food. The natural sweetness of the rice is just right for a daily food sake. ☺️ It's not so "fluffy" as it cools down 👍.

Sake that survived the earthquake that hit Noto on 1.1.2024 🍶. Slightly amber color 🍶. It's like a gentle and cozy feeling that negates my preconceived notion (just lack of study 😅) that Noto sake is "dong ‼️". It is slowly delicious 😋. Even better when heated (my favorite)! I have the impression that it has a base of rice🌾 with peanuts🥜 and green bamboo🥰.

Supernatant 🍶 Slightly effervescent with a hint of milk. Strong alcohol taste. Slight bubbles wrap around the tongue but still sharp. Light mixing 🍶. Banana and lychee appear. It's starting to come together a bit. Further mixing 🍶. The gentle sweetness of the rice (🌾) adds to the taste. Mix thoroughly 🍶. Banana🍌 and rice🌾. Alcoholic and smooth on the tongue 👅. The next day, young strawberries🍓. Milk & acid & delicious 😋.

I don't need to mention "Toyo Bijin" in my mind now. It's "Jyundo Ittou", direct kumi-nama 🍶. White peaches to bananas 🍑, light cemedine in the back Sweet and tasty ‼️ but the sweetness doesn't drag on😮. I paired it with a beautiful yellowtail sashimi that ate Toyo Bijin's sake lees, the back side of the fish 🐟. The sweetness of the sake and the sweetness of the fish go together perfectly 🐟‼️ A miraculous combination and pairing 🍶🐟 without flattery!
