Fukuoka sake. Chilled.
It has a sweet aroma of koji malt that is also refreshing. The mild sweetness of rice that spreads before you know it lingers for a long time, and the elegant acidity and umami gently bring the flavor together.
It is like adding sweetness to the pure sake of Shibarihizuru. It is wonderful on its own, and is also an excellent match for food.

It has a green apple taste, but the bitterness is strong and shallow. The label on the store shelf was highly rated, but it was disappointing.

Shigemasu Sake Brewery.
A clear and crisp taste.
Refreshing acidity.
Slightly alcohol-alcoholic.
It feels rough and spicy.
Then there is bitterness.
As you continue drinking, there is a slight sweetness from the rice.
I don't like it much.

Well, it's a crazy lingering summer heat ☀️
I found some cheap beef tendon, so I spent 4 hours on such a hot day and cooked beef tendon stew with a lot of sweat 😂.
I wasn't sure what kind of sake to serve with it.
I bought a bottle of "Kojiya" Junmai Ginjo from Takahashi Shoten in Yame City, Fukuoka Prefecture ✨✨ which was recommended by the owner of the liquor store.
I thought it would go well with the beef stew 👍.
The fruity and sweet flavor of the rice comes from the subtle aroma of rice, and the rich acidity passes through refreshingly without a pause.
Finally, a moderate amount of bitterness and tastiness remains, giving the sake its own deep aftertaste. However, the impression is still refreshing and light.
Perhaps it is the pleasant acidity left behind and the obviously delicious Yame no Mizu water that makes it so.
This matches the sweet and spicy beef stew, and one can't help but drink more and more.
It was worth all the sweat I put into making the beef stew 😭.
It was a great treat 🙏.

Nice to meet you, Summer Rain😊It was hard to believe it was September😅.
I think it's hard to cook in such a situation, thank you for your hard work ✨.
I've never seen it before, but I like beef stew myself, so I'm very curious about this bottle 😁.
Thank you for your comment, Gyve 🙏 I know, it's too hot 😭.
The unique freshness of "Kojiya" goes well with sweet and strong snacks ✨Beef stew is delicious with konnyaku and boiled egg together 🥹✨.
Summer Rain, congrats on your decision.
Thanks for the many likes ♡😊.
This is not a rice for alcohol 💦.
I love beef stew with konjak & boiled egg and make it often 🍲😋.
Good evening Eirin 😊.
Itokon looks good too👍
This time I used a soy sauce base and added a little miso, but in winter, a soy miso base and thick dote-ni style is also good 😋.
Kojiya Junmai Ginjyo Namaizu

This is the first time I bought a bottle of Kojiya.
The first sip after opening the bottle.
The fluty flavor fills the mouth and is delicious.
The taste shifts from sweetness to spiciness to bitterness. It is rich, but still firm.
The rice is Yume Issho and Yamadanishiki.
It was drunk over several days, but the impression was that it was a blamed sake that insisted on all the aroma, sweetness, umami, spiciness, and bitterness.
Kojiya is the brand of the brewery that produces Fukuoka's Shigemasu. Kojiya is a more assertive sake than Shigemasu.
The name "Kojiya" comes from the fact that when Takahashi Shoten was founded 300 years ago, it was called "Kojiya" because it brewed soy sauce and miso.
After being hospitalized for dissection of an artery in my intestine, I was finally allowed to eat things by mouth (^_^)/.

Good morning Chokki 😃
Is it ok to be hospitalized❓
Do you mean you got the 🆗 this time after hospital treatment after leaving the hospital❓
In any case, congratulations on your ban ㊗️🎊🎉.
Good morning, Chokki 😊
I'm so glad you're back to eating! I'm glad you are recovering little by little 😌I hope Corona's quarantine comes back soon too 🙏.
Haruei Chichi, I was rushed to the ICU the other day and I'm uploading my past drinks from the hospital room. I'll be drinking it all when I get out of the hospital! Thank you!
Mr. Ponchan, I just received the PCR. I will get the results later. The nurse told me that I could use the hospital store, so I said, "I'll have a non-alcoholic drink..." She puffed out her cheeks and said, "You'll get angry ❤", which made me happy!
Haruei Chichi, I'm sorry for the confusion, I've been giving you tipsy reviews from before you were awesome. m(_ _)m I'm sure a drink after being discharged from the hospital must be special! (^_^)/
It's smooth and silky on the palate, followed by a soft rice flavor and aroma. The aftertaste is not so bad, and you can still feel a hint of it after it goes down your throat. It's light, so it goes down smoothly.
