I went to a liquor store in Kobe for Taido's Kame-no-o but it was empty 😿. I guess I'll have to go back around March. So I bought this instead! It's been a long time since I drank at home. It's been 6 years since I've had this label, and this is the first time I've had Yamadanishiki at home. I used to drink it occasionally before I started drinking sake but for some reason I don't drink it much anymore😅. The flavor is a bit nutty, but you can really taste the umami of the rice, with a hint of sweetness and a crisp finish. It seems sweeter than the Junmai Ginjo Omachi I've had in the past. I think this is a feature common to all junmai ginjos from Kukagura, but it also has a grassy or graininess to it. It also has a grassy or graininess to it. It tastes sweeter after a long time than when it is freshly opened. I haven't had a proper Junmai Daiginjo-namaishu from Kukura, so I'd like to try a variety of them!

I'm opening them all up because they are overstocked😅. I couldn't buy it last year and have been waiting for a year. The one I had at the Japanese sake festival was very subtle so I wanted to make sure 🤔. Fresh and fizzy. It has little sweetness, but the gasiness on top of the bitterness is very nice. I'd like to try the sake made with Kame-no-o that comes out around spring.

I went to Gin SHIZUKU in Sannomiya to drink the Taido that Chirito-Techin posted, but the Taido I was looking for was sold out and only a bottle of Hi-iri was available.... I asked the owner about it, and he told me that they have a fresh storage in the summer and hiyayogoshi in the fall. 300ml fresh sake is also available, but they don't brew it depending on the rice harvest. The specs I was aiming for are supposed to be released in December, so I will have to try again at the end of the year 🙄. Basically, it's only available at liquor stores in Kumamoto prefecture, and outside of Kyushu, only 3 in Tokyo, 1 in Saitama, and 1 in Hyogo. So, here is what I bought instead. I chose a dash that you don't see much of anywhere else. I got the impression that the juicy sweetness was quickly followed by a bit of spiciness. It has a slight gassy feeling, like a rummy. I like it because it is light but has a strong flavor. The aftertaste is a little nutty. The ginjo aroma that passes through the nose is quite strong. Fruity and dry? Even after drinking it again, it is still fruity. It is not sweet, though. I think it gets sweeter and more fruity as the days go by.

The label on the back of the bottle is made from Yumagai Omachi. It doesn't say, but it looks like "Sweet Rainbow" is the name of the product. I have had a sweet sake with the front label, but it was sweeter than the front label. It has a freshness and a dense, apple-like sweet flavor. It is a fruity sweet sake that is easy to understand. Since it is made with rice that is not high quality, the price is in the 1,300 yen range for such a flavor. Both sweet and dry Hyakugakumon sake have a green apple nuance in common.

This is the first sake I learned of its existence in a store. It has a sweet and delicious taste with a hint of rummy. The second half has a pungent taste, but it seems to converge with the first half. As the description says, it is light and refreshing at first, but in the second half, it is thicker and gives a different impression. It is slightly fruity and dry.

I've been avoiding Miyoshikiku lately because it's so hit-or-miss, but I bought it because it was the first time it was brewed with Aizan. Miyoshigiku Muroka (family of flowering plants) Aaiyamama🎵 concern Moorish Aiyama🎵 It doesn't say, but according to the social networking sites of the various dealers, it's unfiltered, equal parts rice. It smells and tastes like an acerola drink. It tastes sweet and sour. Even though the rice is from Aizan, it is very typical of Miyoshigiku. Purchased at Gin SIZUKU in Sannomiya. They carry many brands of local sake from Hyogo that are rarely sold in stores. For more information, please visit their official website or SNS.

I've had the fire-brewed version in the past, but this year I bought it because they are releasing a draft. It is said to be a raw sake, though it is not written on the bottle. It is made with 1801 yeast, which is a floral yeast. Sekepiko-san (speaking somewhat quickly) pure silver Oh no 🎵 SEPPICO (speaking somewhat quickly) pure silver Oh no, no, no🎵 Sweet aroma like apple. When you drink it, the initial sweetness lasts until the end and disappears. Cute sweetness from start to finish. Much more impressive than fire-roasted. It is delicious and cosy for using Aizan 😋. Tastes like a bite of lightly seasoned apple in syrup. I think this is the best sake I've ever had from Yukihikoyama.

Nyaba sanjun maiyama genshu😽. It's a jacket, yes 🐱. I tried it with sweets (green tea flavored straw rice cake) as it says, but I don't know what to do with it 😹. The drink itself is refreshing and slightly sweet and spicy 😸😸😸😸. The quality of sake is completely different from that of brewed forest 🐈. You shouldn't give alcohol to cats.

It is registered here because it says Hyakunin Isshu on the label and only Hyakunin Isshu is used now. They use Koshihikari rice from the Kamosho area. It has a complex and unique taste. It's rather sweet. It's raw, but it doesn't seem to be very raw. You can buy it only at a liquor store in Sannomiya, so it's rare. It has a woody atmosphere and a moldy flavor. It's like a local sake. It may be easy to drink for its peculiarity.

More fragrant than I expected. The acidity is strong. Kasumitsuru has an image of dryness, but this is a different type and easy to drink. It is like a wild version of Shinsei with a stronger taste, but without the sweetness and gas.

火入れバージョンは飲んだことあるので生酒チョイスしてみました。甘酸っぱいお酒だけど甘々じゃないんだよね。最後はやや刺激的な苦味もあるし表現し辛い複雑さも。菩提酛という特殊な製法由来のカルピスというか乳酸菌飲料的な感じもある。

兵庫県新温泉町のお酒。表示無いけど公式facebookでは無濾過の原酒とのこと。去年誕生したばかりの酒蔵。なんだろう?酸味と旨味が凝縮されたような味わい。甘みが一瞬あるけどサッと消えて酸味。割と個性的かなと思う。

白鶴が飲食店限定で出してるお酒だけど流通限定で一部のお店で売られてる模様。甘口の白ワイン飲んでるよう。低アルコールだし飲みやすい。まさか白鶴からこんなの出るなんて思わなかった。

It says it's unfiltered local sake, but the feeling I got from drinking it made me think it was raw sake. The shop's popup says unfiltered raw sake, but I'm not sure. The shop's label says it's Junmai Ginjo. The rice polishing ratio of 50% is the Daiginjo standard. It has a semedyne taste, but the sweetness and acidity are good, so it doesn't bother me. It also feels a little like tea. It's unique and delicious.
