In Tamba City, Hyogo Prefecture, where I was on a business trip, I went to Liquorland Hikamiya in search of Okutamba.
I found it. I was curious about this sake!
It is brewed in a wooden cask and aged for 2.5 years in the tunnels of Sanpo Dam, where the temperature is constant throughout the year, and the sake rice used is Hyogo Sake 85, a next generation sake rice produced in Hyogo Prefecture ✨!
Pouring it into a glass, I thought, "What's that? It was thicker than the other two. I had the sensation that it was thickening.
The color is also yellowish, what a delicious color 🤤.
The aroma is not fruity, but has a sense of maturity. And yet the aroma is moist and calm.
Is it because of the aging process? The acidity characteristic of the sake's traditional sake yeast yeast is also mild.
The overall flavor is unexpectedly refreshing!
Slightly dry and crisp, it seems to go well with fish dishes.
