It is said to be an irregular sake. The toji-san overfilled it with 4-stage rice or something😅. The "Raku" on the label represents the over-filled rice, and the blue color represents the pale face of the toji-san. Gutsy, but quite sweet and sour. It is much sweeter than other Raku no sei I've had, but I also feel its character. The rice is from the terraced rice fields of Hida. I can't seem to name the rice, but I wonder if it is Hidahomare or some other rice that is only available in Gifu. I heard that if you mention the name of the rice, you will get complaints like Kamerei did in Hiroshima, but if you don't mention the name, it's OK.

It is Raku no se Yamahai Junmai. It is a pure Yamahai Junmai sake made with Yumematsuri rice in a four-stage hot-kake brewing process. Yumematsuri is a new variety of rice in Aichi prefecture in 2011. We tasted it cold at first and asked for it to be heated. First, the cold sake. The appearance was a pale yellow gold. The aroma is mellow and refreshing. It has aromas of cheese, fermented butter, and banana, which is typical of Yamahai. Along with rice aroma like freshly pounded rice cake, it also has light matured aroma of Choko, soy sauce, and caramel. The texture is smooth. The deep sweetness is followed by a pronounced acidity that seems to be pulled out by the aroma! The acidity cuts right through and sharply finishes! The finish is sharp and long. This is delicious in its own way. From the second cup, I had it warmed up 🍶. The aroma of warmed rice is softly fragrant, with a hint of light aged aromas of calm caramel, chocho, and burdock root. Soft mouthfeel. The smooth acidity is smooth with a light stimulation, and it finishes with a sense of umami that gives a sense of fullness. The lingering aftertaste is long and gradual. It warms up wonderfully! This was a delicious heated sake even for a cold sake drinker 🍶.

Aichi Prefecture Raku-no-Se Yamahai Junmai, bottle-hitched Aichi Yumematsuri Netsukake 4-stage brewing Alcohol content 18 Polishing ratio 70%. Nearly colorless yellow with a sense of transparency. The first impression of the aroma is of plump yogurt. apple, clove, steamed straw, caramel, and strong alcohol. First impression on the palate is strong. Full sweetness, firm acidity, and a good amount of bitterness with a delicious finish. Rich but not too persistent balance, with a good lingering aftertaste. I wonder if the aroma of yogurt is an off-flavor for sake. But personally, I like it very much. The first time I felt it was with Kozumizuru's Namahoshi Junmai. I loved to drink it slightly warmed up! Of course, Raku no se is also quite tasty warmed up! No, I think it really comes into its own when it's heated up! What would be a good dish? I have an image of meat rather than fish! I'd like to drink it with meatballs with sweet and sour sauce. I'd prefer something with thick onions in it. For fish, maybe nanbanzuke? No, I'd prefer something with a bit more punch. Maybe with some spices. Come to think of it, Kouzutsuru goes well with crab, so maybe we could go with crab? I'll go buy some crab.

Bottled in March 2021, BY unknown. The color is amber. It is delicious at room temperature, with a matured flavor and sharpness. When heated, it has a mild candy-like sweetness and sharpness, and is also delicious.

名古屋市栄にある「酒ゃおおたけ」さんで、楽の世おりがらみ無濾過生本醸造を飲んでみて、とても美味しかったので純米酒を購入！✨ あまーい米の香りの奥にナッツの様な？甘いこげ？の様な独特の香りがあっておもしろい！ これが山廃の特徴でもあるのだろうか 飲み口は最初甘くて後から酸がくる感じ 舌に少し残る風味も良い… 本醸造より若干甘いかな、すいすい飲みたくなるのは本醸造の方かも！ アルコール感はそこまで感じないけど、18度もあるので酔いますね笑 酒蔵も家から遠くないので、いつか訪問したいなぁ🍶

We had the pleasure of attending another Raku-no-Sei party with Mr. Murase of Raku-no-Sei 🍶. This time we enjoyed last year's and this year's sake, which was aged at room temperature by the host, and the main course was a 28BY Honjozo that he brought on his back 😆. We had it at room temperature and warmed up 🍶. The first aroma was slightly caramel-like and sweet. The palate has a rich sweet taste of rice with a slight caramel flavor. It is very mellow without a strange aged aroma 🥰. It was so delicious 🍶✨.
