I bought this on a trip to Sado. I guess it is a junmai ginjo for local souvenirs. It seems to be made from local rice. The ginjo aroma is not strong. It does not have a strong sweet or sour taste, nor does it have any bitterness or other unpleasant tastes. It is an orthodox junmai ginjo. This brewery has several breweries and seems to make modern sake as well. The sales floor was also well organized.

Souvenir of my son's visit to the brewery. Also served in Air France first class. Mild ginjo aroma. Light and refreshing. Goes well with seafood. It is a Niigata sake.
It does not say how many years it has been aged, but it has an aroma of maturity. The color is slightly yellowish.
It has a sweet aroma and a sour taste. The aftertaste is refreshing, but a little sourness remains in the mouth.
Purchased on a trip to Sado Island.
Manotsuru Junmai-shu 300ml
Soft and floral in the mouth.
The aftertaste is crisp and clean.
Rice polishing ratio: 60
Alcohol content: 14%.
Made with 100% Niigata rice
It is a rare sake. One of the absolute most interesting sake. At first I thought it was too dry, but with each drink the taste gets better and better. I recommend it with a cheese assortment.
Chichi&Go The aroma is subdued, but the grain is sweet, and the mouthfeel is softly acidic, but the pungency of the alcohol is felt immediately. The sourness and pungency linger in the aftertaste.
