Ichinoya Hello 😊
It's been a while since I've seen a Daiginjo that isn't Junmai 😊.
So I bought it 😁.
I'm impressed with how well they make it 😊.
With 17% alcohol by volume, you'll be drunk before you know it😅
Good evening, kan-san!
It's been a while since I had a drink at Ichinotani on my Hokuriku drinking train trip 2 years ago...
I would like to go there again before the Hokuriku Shinkansen is extended: ❗️
Like the dinosaur label, it is a dry sake with a heavy rice flavor and ginjo aroma.
It is a food sake with a strong rice flavor. It is easy to pair with dishes that are rather strong.
It is a high quality sake.
I have lived in Fukui for four years, but this is my first encounter with this brand in Ono.
It has the appearance of a sweet, refreshing sake, but it seems to be a sake made by Fukui people with a strong core.
I paired it with chicken tempura, and it was quite good.
1,500 yen
Alcohol content 16%.
Yamada Nishiki
Rice, rice koji, brewing alcohol
Rice polishing ratio 40
We are surprised at the price for this spec. It is easy to drink, with a great flavor, but not too heavy-handed.
Ichinotani Junmai Daiginjo. Single-unit bottle.
Purchased directly from Uno Sake Brewery.
Sake with a very slight, but yellowish tinge.
Slightly sweet, with a slight tang as it passes down the throat.
Overall impression is mature. The mouthfeel is quite smooth.
The taste seems to come later, not immediately in the mouth. Sweetness and bitterness, followed by some acidity.
The taste is modern and fruity, but it sometimes has a traditional sake-like quality.
It is a taste with depth.
The taste is a bit thin, so if you drink it with strong-flavored food, the sake flavor disappears. It is good in that it does not interfere with food, but if you want to taste the sake, it might be better to drink it by itself.
Purchased at a local liquor store's sake hanpukai.
From the moment you drink it, the rough flavor spreads in your mouth.
The alcohol taste lingers in the mouth until the aftertaste.

Today we got a bottle of Ichinotani, a sake from our neighbor Fukui Prefecture 😀.
I bought it because of the old-fashioned, hard-core label 😚The specs are also very Chinese, 35% Yamadanishiki daiginjo😤, but the price is reasonable💰They really only have one bottle, but it seems that only the store of one of their customers has a 4-goupe bottle 👍.
The aroma is mild and ginjo like 🍑😊Clear sweetness and refreshing acidity🥰The aftertaste is clean and disappears quickly😍✨It's a beautiful sake that goes down smoothly🥳It's a delicious sake😆👍✨
Good evening, Maecin-san 🌆.
I've only had Ichinotani once.
But I haven't been able to drink Fukui sake lately.
I'll have to start drinking it from now on 😁.
