Recently, a liquor store in a department store near my workplace has changed its name and the selection of products has improved dramatically, giving me something to look forward to on weekends.
The name is "Taga-ji," which means "Takaji" in Japanese.
It is a very light sake with little sweetness and a slight bitterness at the end. It is a dangerous sake that is light and easy to drink.
Ingredients: Yamada-Nishiki, the king of sake rice, polished to 55% for a luxurious brew.
- Complex and deep aroma from the yeast blend and rich flavor of unfiltered Yamadanishiki as the base.
- Sake Quality: The most notable feature is the balance between the richness of the original sake and the ease of drinking at 15%. The balance is neither too heavy nor too light, and the lingering bitterness in the aftertaste, like a Chinese herbal medicine, is addictive.

Very strange taste🤔.

Not hard to drink, tasty but kind of strange taste
And I was surprised that it has a lot of bitterness even though it's Yamadanishiki 😳.
The label said it was a blend of yeasts, so maybe that's why it tastes so complex 🤔.
Slightly gassy
Green apple aroma with minerality, sweetness and acidity.
Light on the palate.
The sweetness itself is moderate, with a little acidity.
Then comes umami, followed by astringency and a slight bitterness.
There is a slight tanginess on the tongue.
There is a slight alcohol taste.
Bizen tasted Kojima sake.
It has a moderately fresh, sweet, and delicious flavor, and is very stable when drunk.
It was a refreshing, comforting, and truly delicious sake.
