Kansai Salmon Wagura Gathering (10) The off-line meeting is now in its final stages, and my memory is getting a bit fuzzy about moving seats and other things, so I thought I'd close by uploading two of the notes that were left behind. Takaji Prototype Unfiltered Nama Sake Aroma of rice with a hint of sweetness, fruity sweetness on the palate, and a pleasant aftertaste. I am a fan of robot anime because of my job and the word "prototype" 🤣. This is my first time to drink "Tagaji" written in hiragana 😋.

The meeting with Mr. Gula ⑬ I've had 18-mori before, but this is my first time to drink Tagaji. And it is a test brew of hiragana. It is a gorgeous and quite sweet sake. A little dry and sweet. It must have been gassy when it was freshly opened. It's a blend of several yeasts, with a bit of aromatic yeast.

Sweet with a graininess. Slightly astringent, reminiscent of white wine, with a slight acidity. It leaves a delicious aftertaste. É It is very drinkable and has an alcohol content of 16%. It is a little heavy, perhaps due to the fact that it is a pure sake. It may be more appealing when paired with a small, tasty snack. It is a draft sake, but it will get even better as the days go by!

Junmai Daiginjo from Tagaji. Fruity fresh aroma and a strong gassy, refreshing taste. The alcohol is strong and has a solid sake feel. Relatively easy to find in the neighborhood, it is quite nice to be able to drink this anytime.

I found an unfamiliar sake at a liquor store I sometimes stop by. It was my first Okayama sake. The bottle was opened with no problem, although there was a warning about opening the bottle. The aroma was a little zingy. When I took a sip, I felt some chili, the acidity was assertive, and finally, the alcohol left my nose. The taste is different from my taste, so I will not repeat it.
