Purchased at Sumino Sake Shop in Nagata-ku, Kobe, Hyogo Prefecture. The volume of soft umami and the lively acidity are well pronounced. Classic modern. A dangerous sake that can be drunk all the time. Next time I want to get Junmai Daiginjo Asahi.

Found at a liquor store in Misawa. Full-bodied sake. Gutsy. A sense of maturity at the end...not to the point of being disgusting. Does anyone know the sake in the last picture? I wonder if the reading is Asuka Nishiki? I wonder... Does it exist? I saw it in an NHK drama.

The last local sake of the day was another label, Tagaji Tagaji Junmai Unfiltered Nama-shu Omachi, from Kurashiki's Juhachimori Shuzo! Apparently, Tagaji Asahi rice is very popular in Okayama, but this year's shipment was not yet in stock. It has the freshness of direct pumping and the sharpness of the aftertaste! I would like to try Asahi Junmai Daiginjo if I have the chance. A gift. It is 100% Yamadanishiki with 55% polished rice. When the bottle was opened, it made a pshu-pshu sound, which gave it a raw sake feel, but the aroma was so strong that it made me uneasy. It smelled more like rotten eggs than fruit. The mouthfeel is fruity and fizzy. The apple-like acidity is quite strong, but the middle to finish has a strong lingering taste and a long, heavy impression. I think it has the strength and intensity of flavor typical of Okayama. It's not bad, but it's not my favorite 😅. I can only feel the cleanness of Yamada-Nishiki for a moment (lol).

Tagaji (多賀治) left a lasting impression on me last weekend among the various drinks I had at the all-you-can-drink event at Happoshuya in Ebisu. I got it at Ikebukuro Seibu in a four-pack bottle. It is important to savor it slowly in your usual home environment and with familiar sake cups. I drank it again, and it is a good sake. It is smooth with a slight effervescence. Although it is 68% polished and not so polished, it tastes like it has a lot of potential. It may be the underlying strength of Omachi rice. I found myself drinking 3.5 gou 😅. A bottle of 1.5 gou might be appropriate. Tonight we had grilled gyoza (dumplings) to go with it. Our standard chilled tomatoes 🍅 and cream cheese.

Last night, I had a drink at Hachifukujusuya with members of the company's sake club? s sake club, we had drinks at Hachifukujuya in Ebisu. The restaurant was the venue of our recent petit off-line meeting, and we felt at ease to revisit. This time we were seated relatively close to the refrigerator, and the elderly waiter brought us sake when he noticed it even if we didn't order it, almost an omakase course😅. That was another new discovery. Among the sakes we drank, Nabeshima's standard safe special junmai was highly praised by all for its clear freshness, balance, and freshness-producing gasiness despite being fire-aged, but equally well received was Tagaji. This unfiltered, direct-filtered Omachi has a lactic mouthfeel, umami, and freshness that is enchanting. I have never been a fan of Oumachi, but I was surprised by the deliciousness of Tagaji's Oumachi. I would love to buy some and drink it at home. Today I'm resting my liver. I will prepare for tomorrow's sake day👍.
