Slightly effervescent and full of juicy fruitiness.
It has a deep flavor with a light sweetness.
Sourness and sweetness are moderate.
It has a complex flavor with a strong umami and a slight astringency.
There is a minerality on the back palate, which is even refreshing.
Good sharpness
This is quite delicious 😊.
The beer is Brujos.

I think 18-mori is more famous. I'm not sure if 18-mori or Tagaji is more famous, but my favorite liquor store carries them 😅.
I ordered the test brewed hiragana takaji because it was the first time I had seen it.
I ordered it because I had never seen a test-brewed Hiragana Takaji before.
A little fruity, and the acidity is refreshing. It also tastes a little bit bitter, but in the end it is very refreshing.
I think it was quite an interesting sake.

And it is a test brew of hiragana.
It is a gorgeous and quite sweet sake.
A little dry and sweet.
It must have been gassy when it was freshly opened.
It's a blend of several yeasts, with a bit of aromatic yeast.
