There is not much odor, but you can feel the koji smell at the back. The sensation on the tip of the tongue is stimulating!

The impact is only on the tip of the tongue, but it dissipates quickly; the taste is bitter and sweet, and the aroma that comes out is not like Omachi, but has a cedar smell like Kouei Chrysanthemum.

The sweetness and sourness are in perfect balance. The impact is brought in the first half and dropped gently in the middle to the last half.

The lingering bitterness and acidity, with a slight Alc burn, make for a not-so-boring aftertaste.

The only question is that the smell of cedar and the taste were not fully integrated.

I think 18-mori is more famous. I'm not sure if 18-mori or Tagaji is more famous, but my favorite liquor store carries them 😅.
I ordered the test brewed hiragana takaji because it was the first time I had seen it.
I ordered it because I had never seen a test-brewed Hiragana Takaji before.
A little fruity, and the acidity is refreshing. It also tastes a little bit bitter, but in the end it is very refreshing.
I think it was quite an interesting sake.

Takaji Prototype Unfiltered Nama Sake
Aroma of rice with a hint of sweetness, fruity sweetness on the palate, and a pleasant aftertaste.
I am a fan of robot anime because of my job and the word "prototype" 🤣.
This is my first time to drink "Tagaji" written in hiragana 😋.

I've had 18-mori before, but this is my first time to drink Tagaji.
And it is a test brew of hiragana.
It is a gorgeous and quite sweet sake.
A little dry and sweet.
It must have been gassy when it was freshly opened.
It's a blend of several yeasts, with a bit of aromatic yeast.
