Osaka Sake❗
A challenge sake of Katanozakura by Yamano Shuzo.
It is a low alcohol content sake because they are particular about the original sake.
We will drink it cold.
The aroma is like muscat or 4MP 🤔.
The mouthfeel is wine-like with strong acidity that tightens from the beginning.
I think I had a similar taste before, but what is it?

A more acidic version of Senkou's Sakura?
The wine-like acidity is immediately followed by a sweetness.
It has a nice sharpness and the sweetness doesn't linger.
It is like wine right out of the fridge, but as the temperature rises, the sweetness becomes more noticeable.
The sweetness is more assertive than the acidity, and the sweetness stays on the tongue 🤔.
It's not like Omachi 😅
On the 3rd day after opening the bottle, the acidity is rounded out and the wineiness is gone, and the umami is asserted and it is becoming more like Omachi 😆.
I guess the impression changes after a few days 🤔.

It was well heated and had a robust flavor that would go well with darker dishes. I would like to try other kinds of sake.
This was my first time to drink Kurehaaru, Akirika and "non" Osaka sake.
I bought this one too after a recommendation from a liquor store 😁.
It's a very sweet sake, and it was difficult to drink 😅.
However, it was easy to pair with sweets and the taste didn't deteriorate at all during the 2 months, in fact, I think it didn't get any better ⁉️ 😊.

Hirakata Kurawanka light nigori junmai sake
The light, refreshing sourness comes with a light sizzle, and the slight bitterness at the back of the umami is nice.
This is a concept sake brewed by the Yamano Sake Brewery of Katano Shikisabe, Osaka Prefecture, and distributed exclusively to a limited number of dealers as a challenge sake.
The first product is a 15% alcohol by volume sake brewed with Association No. 7 yeast (Masumi yeast) from Omachi rice grown in Okayama Prefecture and polished to 55%.
It has a sake degree of -10 and a high sugar content, etc., with an acidity of 1.9 and an amino acidity of 1.3, a status that seems to indicate some acidity as well.
The label is modern and stylish wine-like.
It is served cold.
I don't think it is because of the label, but the aroma is just grape. It has a pleasant ginjo aroma with a harmony of sweetness and acidity like Chardonnay or Sauvignon Blanc.
The appearance is clear.
In the mouth, it has a very smooth texture, with a fresh flavor that is a harmony of sweetness and acidity reminiscent of white wine, which spreads out softly and then quickly recedes, leaving the acidity behind and disappearing, leaving a slight koji acidity in the back mouth that is typical of sake.
If you drink it with your eyes closed, you might mistake it for a white wine until you feel the aftertaste. It is a juicy and refreshing sake.
It is said that the juiciness gradually increases after opening the bottle, so I will enjoy the change over time.
Stylish and delicious!
We checked the change over time after 2 days. The aroma has a refreshing aroma of ethyl caproate, which is more typical of sake. On the palate, the acidity has been reduced and a sweet, fruity juiciness comes forward, with a refreshing alcohol aftertaste that is typical of sake!

Immediately after it was poured, I honestly thought, "Hmmm? But when I drank it a little later, it was delicious!
Maybe it's better if it's a little warmer.
The timing and potential of sake is really complex and interesting!
The best part of drinking outside is being able to encounter a variety of sakes.
Drinking it cold, it seemed a bit peculiar. When brought to room temperature, it has a very refreshing taste. The feeling in the nose from the moment you put it in your mouth is pleasant. The spiciness and weight are not unpleasant. It is also delicious👍.

I was so worried about what to buy at the brewery.
Is it Yamahai or Yamadanishiki? Which Yamadanishiki or Omachi is better for Yamahai?
Yumachi may be more popular, but Yamahai is available all year round and is sold at supermarkets in the Kansai region.
I chose this one.
It is made from Yamadanishiki grown in Katano.
The aroma is slightly sweet and savory.
When you take a sip, you will be hit with a rich, mellow, sweet flavor.
It has just the right amount of sourness and bitterness, and the balance of flavors is just the way I like it. Ah, this is delicious 😊.
I started drinking it at room temperature, but of course it's also delicious heated.
Maybe next time I'll go to the Kansai supermarket and try Yamahai.
I'm sure I'll be really torn between Yamadanishiki and Omachi 😅

It is a sake from Katano City, Osaka.
I went for a walk to the sake brewery to see the new sake.
There were several types of new sake, but I chose this one because it was refreshing.
The rice used is Gohyakumangoku.
The aroma was slightly green apple.
The taste also has a fruity aroma and a light citrus flavor that lingers in the nose with a bitter aftertaste.
The lightness of the new sake and its drinkability are typical of Katanozakura.
