The second bottle was Katano Sakura Junmai Ginjyo Genjyo THEORY 01 from Yamano Shuzo, a local Osaka sake brewery.
This sake is a challenge product limited to some special distributors.
The aroma is also faintly fragrant. The aroma is also faint.
When you put it in your mouth, the juicy sweetness and bitterness come in a flash, and your first impression is that it has an unusual taste.
When you drink it after letting it sit for a while, the bitter and spicy taste becomes weaker and the juicy sweet and tasty taste becomes more pronounced. It is delicious.
The juiciness is said to increase as the bottle is opened and the days go by, so I am looking forward to drinking it from tomorrow onwards 😊.

I happened to get this at an event, and it is a very rare sake from Katanozakura.
The aroma is sweet and nutty.
The taste is robust, as is typical of Katanozakura.
The sweetness, nutty aroma, and milky acidity of Yamahai are all mixed together to create a full and complex flavor.
It is a taste that is addictive. Super ripe and delicious!
When heated up, the sweetness and bitterness of this sake is even more pronounced and delicious.

Attended the Spring Katano Sakura Sake Festival at the nearby Yamano Sake Brewery before the Kansai Chapter offline meeting.
We enjoyed a variety of activities such as Kagamibiraki (sake barrel breaking), sake tasting, sake kasu (sake lees) giveaway, goods and sake sales, and a tour of the brewery led by the brewery's toji (master brewer) himself👍.
The sake tasting was two 60ml bottles, considering the off-line meeting.

The cherry blossoms printed on the bottle are wonderful.
The aroma is mild with a hint of sourness.
On the palate, the sourness is strong and at the same time the sweetness spreads to a mild sweet and sour taste.
It is spring-like, cherry-like, and white wine-like 😊.
The toji-san who showed me around the brewery was amazed that they make this kind of wine 😳.
Unlike the white wine feeling of "Katano Sakura Theory" which I drank before, I feel a firm heaviness with an alu aftertaste.

A challenge sake of Katanozakura by Yamano Shuzo.
It is a low alcohol content sake because they are particular about the original sake.
We will drink it cold.
The aroma is like muscat or 4MP 🤔.
The mouthfeel is wine-like with strong acidity that tightens from the beginning.
I think I had a similar taste before, but what is it?

A more acidic version of Senkou's Sakura?
The wine-like acidity is immediately followed by a sweetness.
It has a nice sharpness and the sweetness doesn't linger.
It is like wine right out of the fridge, but as the temperature rises, the sweetness becomes more noticeable.
The sweetness is more assertive than the acidity, and the sweetness stays on the tongue 🤔.
It's not like Omachi 😅
On the 3rd day after opening the bottle, the acidity is rounded out and the wineiness is gone, and the umami is asserted and it is becoming more like Omachi 😆.
I guess the impression changes after a few days 🤔.

This was my first time to drink Kurehaaru, Akirika and "non" Osaka sake.
I bought this one too after a recommendation from a liquor store 😁.
It's a very sweet sake, and it was difficult to drink 😅.
However, it was easy to pair with sweets and the taste didn't deteriorate at all during the 2 months, in fact, I think it didn't get any better ⁉️ 😊.
