Today, I got "Kawaguchi Natto" which I have been curious about for a while!
I got it on the way to eat Utsunomiya Gyoza on a day trip to Tochigi last month, so it's practically a Tochigi souvenir👍.
When I opened the bottle and poured it, the aroma was of honey, apples, and grain.
The mouthfeel is clear and crisp with a citrusy acidity and astringency. It tastes like grapefruit with a hint of sweetness.
It has the richness and mellowness of Sasanishiki's umami, and the sharpness of the interweaving of the dry, acidic, and astringent tannins gives it an exquisitely balanced taste!
It has a hard-edged impression with a nuance close to that of an aged sake, but it is a presence that does not lose to the strong flavors of the teriyaki amberjack I happened to be eating, so it will be an excellent accompaniment during a meal!
Of course it doesn't taste like natto, but you will want to enjoy it as an accompaniment just like natto!
I hope to buy the red one next year 😌.
