This one was recommended to me when I said I wanted to pair it with motsu-ni-ni!
It has a creamy, lactic-acid derived schwash.
The bottle was labeled "be careful not to open the bottle", but it was so mild that it was surprisingly quiet, and even after drinking it, it had less of a squashy feeling. The acidity and astringency give it a delicious flavor that is not overpowered by the thick motsu stew.

This sake brewery is located in Mashiko. I bought this sake at Okada Sake Shop when I visited the Mashiko Pottery Market. They also recommended Junmai Daiginjo, but I bought this one because it is rare to buy active nigori in May.

This is exactly what it says. This is exactly what it says, and everything is well-balanced, elegant, and delicious. It is so delicious that one wonders if this is what it would be like if Jyushiyo made nigori sake.

I suggested to the manager that it would be fun to do a sake comparison of various rice varieties. It was adopted. The first one I wanted to try was Nozomu no Yume Sasara, a slightly sparkling sake that seemed to have been pressed for the first time. It had a pleasant fruity aroma, and the sweetness and umami spread out and was extremely delicious. There was a nice bitterness and a nice sharpness. I guess it's the rice flavor of Yumesasara.

Last weekend, I drank my first sake in a long time.
It was a wish I received from a business partner about a year ago.
It was a wonderful sake with no deterioration because I kept it carefully in the fridge.
It has a freshness like a fresh sake, a slight aroma and a melon-like mouthfeel. The sweetness is only at the beginning and disappears quickly and has a very nice aftertaste.

Sweet aroma of melon and banana.
When you put it in your mouth, you will feel its sharpness and sizzle! Light gassy and pleasant to drink.
The taste is light and refreshing with little sweetness and acidity, but when you savor it slowly in the mouth, the umami of the rice gradually emerges. It will have a different taste if you let it sit for a while.
The sake is made from the traditional sake yeast yeast, so I imagined it would have a fermented dairy-like flavor, but it is surprisingly moderate in this respect and is easily accepted by all people.
The aftertaste is slightly bitter.
It seems to go well with spring ingredients.
It is probably not a good idea to compare one sake with another, but I think it was similar to the Kaze no Mori in terms of drinking comfort. Both are great sakes. Thank you again.

The mouthfeel is like juicy ripe apple juice. The gassy sensation is more reminiscent of the fermentation process than of freshness. The taste is quite complex and interesting, with some brown sugar and chocolate sweetness. Astringent! The aftertaste is sharp, and what lingers faintly is a lingering sweet chocolatey aftertaste.

This was also purchased at La J oumon. I had seen this sake somewhere and wanted to try it, although the brand name was different.

At Kanbei Sake Mamoru, we had a comparison of three types of local sake that Tochigi prides itself on 😋.
I don't have any information about the specs, but the aroma is mild and gentle on the palate☺️ with a beautiful rice🌾 sweetness😚 and a sour aftertaste that is clean and crisp 🥳👍This was a delicious sake that goes well with meals.
