As the name suggests, it has a beautiful yellow color. The mouthfeel is smooth and the umami spreads softly, followed by a strong kick from the alcohol. The slightly rough taste is well balanced with a moderate bitterness and goes down smoothly.

Purchased through a sake hanpukai at a local liquor store. Light on the palate with a gorgeous aroma. It has a light and light texture, with a strong sense of rice flavor that cuts through quickly. It is a good sake that does not interfere with the meal, but makes a strong statement.

This sake is from Fukui City, Fukui Prefecture. It has been active in new initiatives in recent years and is making a name for itself in the prefecture. The owl on the label is impressive. The vanilla-like aroma has a mild fragrance and a spiciness that is about to break into the bottle. The gentle sweetness trails behind. The vanilla aroma that lingers on the palate refreshes the palate. How about when it is warmed up? A noble, grape-like aroma comes through softly. The dense pungency rises up. The spiciness and umami that wafts through the aftertaste are plentiful. It would be better to warm it up to activate the umami.

It has a beautiful taste with light acidity and umami. It has the richness typical of Yamahai sake, yet it is refreshing and comfortable to drink. I tried drinking it slightly warmed, but I prefer it cold.

The first bottle we opened at the beginning of the New Year was a bottle of "Fuku Chitose Namae Junmai Dry Taste" brewed with the prefecture's original sake rice "Sakahomare", which was grown in Fukui. This is the third time this season that sake made with Sakahomare has been brewed. The sake brewery says that this is the third year they have brewed this sake, not the third year of honesty, but the third year of confidence. The warming sake was recommended, so we tried it lukewarm to finish the saké. The slight warmth of the lukewarm sake matched the umami of the sake, making it a perfect saké to drink with a hot pot on a cold day!

A moderate ginjo aroma. It has a smooth texture with moderate sweetness and acidity, and a bitter aftertaste that lingers on the palate. As the brewery says, it is best drunk chilled. I feel that the acidity and seme aroma are more likely to come out when it is cold or warm. As pointed out, it is really delicious when drunk in a good condition.

This sake is from Fukui City, Fukui Prefecture. CUVEE" is a wine term meaning "made in a separate process from other wines or other fermenters. I don't know much about wine because I don't drink it, but I guess it means something like a specially selected product. Tajima Shuzo is a Yamahai brewery that has been ambitiously producing sake with a wine-like flavor, such as CUVEE and rice wine. It is a brewery to watch out for. Wow! Quite sweet and sour! Sweeter than the rice wine I had previously tasted and a little less acidic, I personally find it a little easier to drink than the rice wine. Both the woman in attendance, who had almost zero experience with sake, and her sake-loving friend were delighted. How about when it is warmed up --- well, it is sour. Well, it is sour. The sourness is very noticeable. It's a new sensation and not bad if you want to sip it slowly. The year-end party started unexpectedly, but ended with Joppa's drunkenness (even the picture is blurry). I really appreciate all of you who supported my unreliable, easily panicked, slow-working, and demotivated sponsor with your devoted help and encouragement. The fruitiness is hard to believe it is made from rice. The soft sweetness is immediately followed by a rush of sourness and aroma. Although the alcohol content is low at 12ºC, the strong flavor is very satisfying.
