[The second round of drinks was a round of local Fukui sake 🍶. The second drink is a glass of local Fukui sake. Fuku Chitose Junmai Daiginjo Limited ALL BLACK The cool aroma of rice, the thin umami that extends smoothly through the mouth, the acidity, and the clean and pleasant aftertaste are addictive! The entrées are [fried ginkgo nut with salt] and [sardine with sesame paste]. and especially, it goes well with [sardine with sesame paste].

Fukui Prefecture. Fukui City. Tajima Brewery Co. Fukuchitose Yamahai Kijoshu R2BY, local sake amt limited. The same one we had at a previous tasting was purchased before the tasting. It was served cold. The color is yellowish. The top aroma is slightly mature, with a hint of burnt caramel. It has a viscous mouthfeel that clings to the tongue. The taste has a milky acidity like lactic acidophilus that is assertive, but the mouth is filled with a thicker sweet and savory flavor. After swallowing, a caramel-like hint of aroma escapes into the nose, and a mellow, brown rice-like quality spreads. The aftertaste is a combination of sweetness and acidity, pulling the richness together and lingering. The impression is still the same as when we tasted it, and it has a nice and unique character. Ingredients: rice (domestic), rice malt (domestic), sake Rice polishing ratio: 65 Alcohol content: 16%.

Sake made with cherry blossom yeast. I bought it because I like flower yeast. It is refreshing and has a trace of sweetness. A little floral, probably because of the floral yeast. I thought it needed a little more umami. When I tasted another product at an antenna store before, I felt Fuku Chitose was a bit lacking, so maybe it's not a good match?

Amt liquor store tasting and sales event⑬. Last but not least, the liquor store's Amto original sake. Fukuchitose Yamahai Kojo-shu. The taste is rich and sweet, with a hint of sourness that may have come from the Yamahai method. It has a rich sweetness and a sourness that may be derived from the Yamahai method. Tajima Shuzo makes unique and interesting sake. This was my first time attending a tasting at Amto Sake Brewery, but I enjoyed the tasting with a high degree of freedom, such as heating up the sake by myself, mixing spirits with carbonated water on my own, weighing the sake, and borrowing a funnel. Afterwards, we stopped by the sake corner of Keihan Department Store, where bouken-san got laid again, and then we went home.

Amto Liquor Store Tasting and Sales ⑫ Furthermore, Amto original sake from the liquor store. Fukuchitose Sake Assemblage, aged in noble rot wine barrels. Recently, Fukuchitose has been the focus of my booming taste buds. The color is clear and pale yellow, with a hint of woody aroma with a mild acidity. It is the driest sake in the brewery, but the sweetness is well-balanced and easy to drink. Very mellow... Not too trendy, not too modern, not too old-fashioned. This Fukuchitose is a sake from a brewery where the father makes traditional Yamahai sake and the son (the current brewer) is trying a new style of sake that has its roots in wine brewing. This sake is the brainchild of the current brewer. Although the brand names are the same, the two pillars are parallel, so if you like it at a bar and want to buy it to take home, it is good to taste it before buying it! Both pillars are sure of their ability in that line.

Amt tasting ⑬ This is also Amto's original sake. It's interesting that it's a Yamahai Kijoshu. It looks like it is aged for 5 years! It is rich, mature, sweet and delicious. I also drank some gin and spirits from HARUKO-UNYUYOU! After this, Nemuchi and I walked to Keihan Department Store in Moriguchi to see the alcohol section... When we changed to the JR line at Kyobashi, we realized that the alcohol we were supposed to have bought was missing. I thought I might have just thought I had bought it, so I asked Neemuchi on LINE, and he said he had indeed bought it! On the way to Moriguchi, I stopped at a convenience store to use the restroom, so I inquired about it, but I couldn't find it 😿. It's also possible that I forgot it when I sat on the bench on the platform 😭.

Amt Tasting ⑫ Amto's original sake. It has a dark color. I thought it might be a bit strong, but it was not that strong. The taste is complex and difficult to describe due to the fact that it is an assemblage 😅. It says it's aged in noble rot wine barrels, but the sake itself seems to be made from noble rot wine.

Fukui, Fukui Prefecture, Japan. Tajima Sake Brewery Co. Fukuchitose PURE RICE WINE Not a metamorphosis, but a unique junmai sake😁. From the appearance, it is unique and not like sake. Yujiro Tajima studied under Professor Kubo Nakata, famous for his work on flower yeast at Tokyo University of Agriculture, and apparently studied "wine" for his graduation thesis. The result is this sake. This sake is made with wine yeast and 90% polished Koshihikari rice. It is served cold. The color is clear and dark yellow like a kohaku color. The color and appearance are wine-like. The top aroma is slightly caramel and honey-like. The mouthfeel is soft and slightly tangy. It feels sweet and sour, but the full-bodied sweetness is richer in sweetness than in sourness, and the slight sourness asserts itself in the aftertaste, giving it a refreshing impression. The aroma is caramel-like, and I wonder if it is aged a bit...delicious. I heard that they also have a cuvée, so I'd like to try that next time... I'm curious about this brewery.
