There were three kinds of Hokkaido sake.
I've probably never had this one.
Hokuto Zuisho
I think it's a Junmai Daiginjo from the rice polishing ratio.
It was a refreshing and delicious sake 🍶.
extensive knowledge
The sake is made with 45% polished rice from "Ginpu", the brewing water is from the underground water of Lake Shikotsu, and the toji (master brewer) is from Hokkaido.
Rice: Ginpu
Polishing ratio: 45
Sake degree: -1
Acidity: 1.7
Amino acidity: 1.3
As the label suggests, it is a representative brand of "Kitano-Nishiki".
It was featured in the movie "The Railroad Man" starring Ken Takakura, and is the oldest brand of Kobayashi Shuzo, which has lived together with the coal mines of Sorachi. This is a honjozo with an emphasis on flavor.
It has a slightly sweet taste and acidity, and can be served chilled, at room temperature, or warmed,
It is delicious at any temperature and can be easily matched with dishes such as yakitori (salt or sauce), grilled fish, grilled oysters, and simmered dishes.
Special pure rice with a rice polishing ratio of 60%. The aroma is like that of old Japanese sake. Along with the umami, a light bitterness, astringency, and a peculiar aroma spread out. It is peculiar, but not bad. The aftertaste is clean and refreshing. It mellows out when warmed to lukewarm. It is easier to drink this way because it has less acidity, which is common.

The third of the drinking comparison
Kitano-Nishiki Hokkaido Local Sake Choice
This was served at room temperature.
The sake is -4 sake, so rather than being sweet, it has a very heavy and robust impression!
Probably because it was served at room temperature and the rice polishing ratio is 65%!
I just realized that my preference is "cold sake with about 50% polished rice"!
It's very cold in Hokkaido. It's the season for hot sake! (Even in midsummer, it's still hot.)
(It's always hot in the middle of summer, too.) I don't get a chance to drink Hokkaido sake in Honshu. But in Hokkaido, you can drink a lot of Hokkaido sake!
Is it any wonder?
Kita no Kishiki, hot sake, about 50°. It's gentle! Umami and acidity! And there is a long, gentle aftertaste.
Recommended for beginners of hot sake.
