KIKUFES 2023 Winter Edition" ㉜ The "Minshuku Toono" has been making doburoku for 20 years even though it is a guest house. Doburoku is a dry, sweet, and refreshing drink with a rich, creamy flavor. The dry taste made me think that it would be a bit dry and squashy in the mouth, but it was smoother than I expected. The fact that it is not very sweet was also unexpected. I have been interested in it for a long time, but I didn't realize I could drink it here 😊.

I've blanked again...it's been a while since I've had a drink at home! I drank it at a corner bar at GINZA SIX before and was so impressed that I bought a bottle of Gonka. I opened it and found it tasted sour and clear, like a white wine! I wondered if it tasted like this ⁉️, but my husband, who is a down-home drinker, said, "That's doburoku, you have to mix it. After mixing it and making doburoku, it became a lactic acid bacteria beverage with a greffle flavor that tastes tangy on the tongue while maintaining the sour aroma. Delicious! I am a fan of the "rice shaving" method. It is not about "grinding the rice to clean the taste. Change the soil to clean up the taste and eliminate the miscellaneous flavors. The complex and fine flavor seems to be reflected in the persistence in growing the rice from the soil 😄.

I have always been curious about this sake. First, let's take a sip. Smells more like candy than fruit. Banana cake, lychee, yogurt, freshly baked pound cake, very ripe peaches. No sign of activity. Concentrated! Concentrated syrup. Tart on the tongue with a good sweetness, ripe fruit like pears, green apples, and some alcohol as when the fruit is quite ripe. Finishes with bitterness, acidity and sweetness and has a long finish. Good and amazing. Power. It's drinkable with a splash. Shake a few times to mix and drink. Rice, milky smell. The rice flavor, sweetness, and sourness of the rice spread out in a flash, and the doburoku, or doburoku, has a fruitiness that surrounds the main rice flavor, and the bitterness comes in and gives it a nice sharpness. The rice is almost completely melted, so it is smooth and refreshing. Delicious! A few days later, after shaking and mixing, it did not separate even after a few hours. The alcohol feeling gradually faded away, and when I drank it, I could feel the strong rice flavor spreading out, sweet and mellow, like a dessert. A delicious drink.

The aroma is just like yogurt. When you include it, the milkyness fills your mouth. There is a graininess of rice, but it feels like a yogurt liqueur with a delicious and pungent flavor. The aftertaste is surprisingly spicy and bready. It is a drink to be taken as such 😅. It may be because it is a sake made from the traditional sake yeast, so the milky taste is even stronger.

It was shockingly delicious 🫢. I asked for a doburoku of rice and agape, including sogape, to compare and was awakened by its sour, spicy, and greefy taste. It also has a deep lactic acid taste. This is amazing! This is the corner bar of GINZA SIX and IMADEYA after my run. There were many foreigners there, and some of them showed a photo of Shinsei's Ame Frog to the waiter and said they wanted this one😅. We also made friends with a Korean guy who lives in LA and was born in Australia during the kaku-uchi, and he told us that he came here to buy San-Do and Shinsei No.6. Unfortunately, IMADEYA didn't have it, but we introduced him to an izakaya in Tokyo that has a lot of Shinsei 😆. A quick word of caution. This one was sold in the store and was priced at ¥3,630 for 500ml, but I didn't hesitate to take it home. Here is an excerpt from the label This sake is a special "doburoku" brewed in a wooden vat using the "mizumoto brewing method" from the Muromachi period, without using any association yeast, lactic acid for brewing, or chemical additives. The strength of the natural yeast, lactic acid bacteria, and various bacteria that resonate with the yeast and lactic acid bacteria produces a complete fermentation process that takes more than 150 days for the unrefined sake.
