I've blanked again...it's been a while since I've had a drink at home! I drank it at a corner bar at GINZA SIX before and was so impressed that I bought a bottle of Gonka.
I opened it and found it tasted sour and clear, like a white wine! I wondered if it tasted like this ⁉️, but my husband, who is a down-home drinker, said, "That's doburoku, you have to mix it. I thought it tasted like this , but my husband, who is not a drinker, said, "That's doburoku, so you have to mix it.
After mixing it and making doburoku, it became a lactic acid bacteria beverage with a greffle flavor that tastes tangy on the tongue while maintaining the sour aroma. Delicious! I am a fan of the "rice shaving" method.
It is not about "grinding the rice to clean the taste. Change the soil to clean up the taste and eliminate the miscellaneous flavors. The complex and fine flavor seems to be reflected in the persistence in growing the rice from the soil 😄.
