A brewery that specializes in aged sake serves sake made for aged sake as undiluted sake. It's been about two years since it was made, so maybe it's been sleeping in the shop? It doesn't have a nigori feeling at all. It has a certain aged feeling, but it's clearly different from the old one. It's not fruity, but it's sweet. It is not fruity but sweet. The sourness is strong and it is like a thick honey. It is sweet, but some people may feel the alcohol in the latter half is pungent.

The Year of the Rabbit will soon be over, so I decided to open the bottle. Time flies............................................. When the bottle is opened and poured, the aroma is full of bitterness like chocolate. The mouthfeel is surprisingly mellow and rough, and the taste is very chocolaty. The balance between sweet and astringent umami and mildness makes it seem that way, and it is a delicious taste that can only be described as chocolate ✨. It has a unique old sake taste, but I think it is one of the easiest to drink! And the aftertaste is also choco choco choco... 🍫. It was the first time for me to buy and drink it properly, but I guess it is delicious because it is from an old sake brewery! If I see it again, I'll buy it 😌.

At Nihon Shu-Tsubaki in Jujo. Beautiful amber-colored sake. Warmed sake. Aroma of old sake. Deep, full-bodied sweetness and acidity. Roasted taste. I like it because it's always delicious. Date of production: February 2024

The eighth cup went to "Daruma Masamune" which was sitting with "Hyakujuro"! Sweetness like brown sugar, brown honey and caramel. A savory sweet astringency with a burnt taste and a rounded umami. It is sweet but not too heavy ✨ as it gradually fades away leaving a caramel-like sweet astringent taste at the end.

Sweet, with a good acidity and a strong peculiar taste, it is a unique sake 🍶‼️ This is intoxicating. I bought it along with the Eiko-Fuji I posted earlier😅. At the time I bought it, I thought this sake was an oddity because of the high rice polishing ratio and the color. But when I actually tried it, I found it easy to drink. It's a bit sweet. I'm afraid that I'm going to get drunk too fast😱But it's good👍.

A super-sweet, melt-in-your-mouth sake made with sake that has been aged for two years as part of the brewing water. Umai! Rich! I love it! On the rocks with ice. Goes well with mixed nuts.
