A former Gekkeikan executive established a sake brewery revitalization company, Yume Sake Brewery Co. to buy Yoshida Sake Brewery, which was in a state of dormancy, and revitalize and re-activate the brewery by putting in place a system.
Tensyu Issen Chikubushima Junmai Ginjo
Fresh and full of flavor. It is fresh and full of flavor, with a slightly chocolaty taste.
◉Hana-arashi Watafune 6 Junmai Daiginjyo Nama-narashu
This is a very mature sake, so I asked if it had been aged for a while. I looked at the label on the back and saw that the first tank was opened in January, so I guess it's a hiyaoroshi-like sake. It has a chocolate-like flavor and a slightly spicy aftertaste.
We had little time left, so we talked a little and moved on...

It was a unique and delicious sake with a strong alcohol taste 🍶.

Rice polishing ratio 55%, sake degree +5.5, acidity 1.6, amino acid 1.4, alc 15%, crisp and dry! This is the first time I have had sake made with Ginbuki, and it is very tasty, including the kick!
