I had a reason to go to Yajima TDL, so I thought it was a good opportunity to buy something with it, and I was interested in this one.
This sake is a blend of a 1+ year old junmai sake base, a 30+ year old junmai sake, and a 5+ year old aged junmai "afs" 🍶.
The aroma is a combination of soy sauce and brown sugar, reminding me of Mitarashi w. The mouthfeel has just a little bit of a tang, with caramel at the back of the moderate sweetness taste, but the flavor is completed by a delicious and refreshing acidity.
When I drank Daruma Masamune 3years ago, I found that Mitarashi went very well with it, so I tried pairing it with it, but it was too sour and not good enough 🤔.
On the second day, it became sweeter, so I tried again with mitarashi, the taste became lighter and it went well with it ✨it became easier to drink 😆I tried to pair it with ice cream, but it wasn't good 😅.
I read an article by a brewer and saw that it tastes good mixed with lactic acid and carbonated water, so I gave it a try! If you don't like old sake, this might be good for you ✨.
On the third day, I paired the lukewarm sake with cheesecake based on Pon-chan's review, which was also very in tune and delicious 🥰.

This is my favorite type of wine! I can drink as much as I want!
I was on dinner duty today, and my wife and I paired it with Japanese dishes such as striped hokke, mushrooms with grated ponzu sauce, and vegetable miso soup, and we emptied a 4-gou bottle in no time 😄.

The aroma is almost scentless and extremely subdued.
The mouthfeel is clear and sweet.
The inside has a slight umami flavor, but the impression is still "watery" and clear.
The aftertaste is dry, with a slight astringency, but it quickly fades away.
→It is a reinterpretation of "Kamizen Josui" as a modern sake.
It will appeal to those who like a refreshing taste, but I found it a bit lacking.

It feels much drier than other chrysanthemums I've had.
Other Kangiku often has red fruits, but this one has blue fruits.
Bitter and astringent taste, especially pear-like, can be felt from the middle of the bottle onward.
I didn't feel Aizan-like taste, but I wondered if this is what Ken Aizan is like.

The sixth brewery in Chiba Prefecture is one of my favorites, Kangiku Meikozo in Yamatake City🥰.
We were served Identity- So no Mai 50 from the Discovery series 😘.
I wanted to buy all 4 bottles, but my pocketbook was sad.
This 🍶 is on the brewery's website,
We feel that this annual effort is steadily improving the quality of our sake, as we were the first to win a prize at the National New Sake Competition this year (2025) for the Junmai standard (Silver Lining) for So no Mai rice produced in Chiba Prefecture. So this year's guess is So no Mai with a yellow label.

The aftertaste is a grefleur-like acidity and bitterness that quickly kills you...too good ✨.
Amazing. This is too good. This is a swamp.
This is a versatile food wine that goes well with both Japanese and Western food.
My wife also said, "It's not so sweet and it's delicious.

I took a sip! I thought it would be more like a classic 😋, but it's a fresh and fruity wine with a nice balance of flavor and acidity 😆.
By the way, after we went to Yajima Sake Shop together, my sister was wondering what other liquor stores are there 😅She said she heard from someone who knows a lot about it and asked me on LINE if I've been to "Sake no Oikawa". She asked me if I've been to "Sake no Oikawa" on line! I've bought more than 40 bottles of sake at Oikawa's 😊".
