Monsoon is the most popular Laughing Four Seasons' kijoshu. I was attracted by the fact that it was a special edition and the modest (luxurious) label. As it turned out, I was in favor of Monsoon. For a kijo-zake, it is rather refreshing and has no peculiarities. The elegant and light taste was new for a kijo-zake, but I also thought that it did not need to be a kijo-zake.

⭐️⭐️⭐️⭐️ Yajima Sake Shop 720/ Junmai-shu Unfiltered Nama-shu Direct Kumi 17 Yamaguchi Saigetsu no Shizuku 60% 2024.02 I decided to buy this with Yamaguchi Prefecture's rice "Saigato-no-shizuku" 😊. It's fresh and chirpy 😊. A little bit ... a spike of bitterness muddies the aftertaste 🥹. The entrée was pork buns from "Yoshino" in Iwaki 😊they were so filling with a rich flavor😊delicious😊and went well with the Choyo Fukumusume😊beef belly meat buns were also very tasty 😆.

⭐️⭐️⭐️⭐️⭐️ Yajima Sake Shop 1800/3850 yen Junmai Daiginjo Unfiltered Nama Sake 15%. 80% Akaban Omachi from Okayama Prefecture, 20% Yamadanishiki from Hyogo Prefecture 50% polished rice 2024.03 Sake degree -4, Acidity 1.5, Amino acidity 0.9 A new sake for Kangiku's new beginning. It was a time when I had to say goodbye. This is a shout out to him who is moving on to a new beginning. A retrospection, regret, and remorse for myself, who knows it's no good but can't stop. This year's Hinata Sake was a mixture of joys and sorrows 🍶.

⭐️⭐️⭐️⭐️⭐️ Yajima Sake Shop 720/1850 yen Special Junmai Unfiltered Nama-shu 16 Koji rice/Gohyakumangoku & Kake rice/Nagori Yuki produced in Tokamachi, Niigata 60% 2024.03 This is the only sake made from "Nagori Yuki" (Uruchi rice) 🍶 Fresh, lactic sweetness and deliciousness dance in the mouth. After a few days of storage, the sweetness became even more pronounced 😊.

Aka Tube with a clean fruity feel. A bit expensive. No description but Junmai Daiginjo specs. I had never seen this one before, so I was curious and bought it. It has a fresh aroma and a clean mouthfeel, which is typical of Akabu, but the acidity is a bit different? I think this is a matter of taste, but I prefer to taste the acidity at the beginning or at the end, but the sourness is felt in the middle. It is a slightly different Akabu.

I was attracted by the limited edition and bought it. It has a melon-like aroma and sweetness, followed by bitterness. The bitterness is more dominant than the sweetness. Alcohol level: 16%. Rice polishing ratio: 35 Rice used: Yamadanishiki from Hyogo Prefecture, District A April 23rd It has been two weeks since the bottle was opened, and the bitterness is gone; it is now just a sweet sake!
