This is the masterpiece of Sawa Hime, whose concept is to "declare true local sake". We have broken away from "Yamadanishiki," which is used by all breweries, and have dared to use "Hitogokochi," a sake rice that is the answer to the question of what is a locally produced sake. Although a difficult rice, Hitogochiki won the World Champion in 2010, and has evolved even further through tireless study. It has a gorgeous and refreshing fruity aroma, and a sense of balance between soft and light umami and acidity that belies its aroma, just as you would expect. When drunk in a wine glass without being overly chilled, it is as satisfying as an expensive white wine.

Since it was highly praised in a special feature on sake in the gourmet magazine "dancyu," it has become hard to find. This brand is at the core of the unfiltered sake boom. However, the one we obtained this time is an "orikarami" type, which is rare for Tobiroki. When poured into a sake cup, the double circle at the bottom of the cup looks faint. The sake was relatively light and light in comparison to the usual image of a fresh sake with a strong body and a satisfying drinking experience. It is relatively light and gentle, in contrast to the usual image of a fresh sake with a firm body and a lot of drinking power. However, while most ogara-mi are "slightly sweet", this one is not. This one, however, stays in the dry category and has a different character. It should be drunk well chilled.

What a great start for the evening! I was able to taste the variety of Sake from Kiyasho Shuzoji. I'm so happy to be able to drink Sake from one of my favorite breweries. This restaurant has a wide range of Sake and the staff is very knowledgeable about tasting and food pairing. 😃

Here is a new sake from Matsunotsuki! Junmai Ginjo Gohyaku Mangoku Shiboritate" is a new sake from Matsunotoshi. Matsu-no-Ju has been represented by a mustache-shaped label, but the brewer thought it would be nice to have a label like this. The brewer's thought was that it would be nice to have a label like this. The faxed product information states, "Although it does not compare to the eccentric jackets of many other companies," but it is a novel and eccentric enough design. However, the design is novel and eccentric enough, and the label has a strong impact. It is unforgettable at first sight! (Laughs) It has a fresh and refreshing style that can only be achieved with new sake. It has a soft and smooth texture that can only be achieved by ultra-soft water brewing. It has a crisp and firm flavor typical of Gohyakumangoku, with an astringent and gaseous aftertaste that tightens the palate. I love this refreshing dryness! It naturally makes you feel refreshed. And yet, the rounded sweetness and deliciousness, like a hint of muscat or white peach, is just so good! I can't get enough of this tsundere feeling!

This is a refreshing summer sake from Yokoyama, the only sake on Iki Island, Nagasaki Prefecture. Yokoyama's summer sake, which "tastes like biting into a fruit," has a refreshing ginjo aroma that passes through the nose pleasantly.
