This sake is brewed by a female toji (master brewer) at a sake brewery in Yamaguchi Prefecture. It's actually a new sake that will be released in 2020, and it's a brand that is getting a lot of attention. Ten" means "Amaterasu," and "Amami" means sake made from rice grown under the sun.
I'm very curious about the pattern on the label. Is it a jewel or something? It is simple, but it also has a modern feeling.
When I first opened it, I felt a little carbonation and a fruity taste like white grapes. There is no alcoholiness or bitterness. It's not too sweet somehow, so it's refreshing to drink.
After a few days, it loses its carbonation and tastes like grapes. Although it is diluted, it is delicious even if you drink it with carbonation.
Because it's a new brewery, I don't think they ship as much as they should. It's very tasty, so I hope it becomes available at various liquor stores.

But it seems to have been a good decision.
The taste is very delicate. The aroma is not that strong, but it is like a gentle lychee. The sweetness and acidity are clean and gassy. Everything is in good balance.
The aftertaste is sour and slightly bitter. The finish is clean and crisp. As is typical of Daiginjo, no miscellaneous flavors can be felt until the end. The taste lingers.
This is my second time drinking Tenbi. I remember that the Junmai Ginjo I drank before was not enough, but this time, too, although there is no showiness or habit, it is strangely delicious.
I wonder if my palate has become more discerning, or if this sake is just as good. I think I'll try the Junmai Ginjo again and see.

When I took a sip, I felt the flavor of custard cream. I was convinced that it had eggs in it.
After the sweetness comes, the bitterness appears unexpectedly.
The aftertaste is sweet and bitter with a strong bitterness.
Although the alcohol content is low, it is not easy to drink.
This sake has been occupying a narrow space in my refrigerator where a four-pack bottle cannot fit, so I plan to add an icebreaker next time.

I tried to pair it with Zaru Soba (buckwheat noodles) to achieve harmony in the mouth.
You can feel the tang of the Wasabi and the flavor of the Soba in your mouth, and then pour in the crisp Junmai Sake with its acidic and bitter taste.

A clear but tasty namaishu! This is delicious✨As the name "Kanjuku" suggests, the sake was matured at low temperature for about a year, and the concentrated and rich flavor was delicious.
It has a juicy flavor like ripe peaches, with a lingering gaseous feeling and a gentle acidity that follows. Oh, I can't get enough of this 🤩!

I thought it was strange that it had a sticky volume (fullness of flavor) even though it was raw, and when I was researching it, I found out that it was bottled from unfiltered, unpasteurized raw sake that was pressed and then aged at low temperatures for six months in its "raw" state. Interesting!
