This sake is brewed by a female toji (master brewer) at a sake brewery in Yamaguchi Prefecture. It's actually a new sake that will be released in 2020, and it's a brand that is getting a lot of attention. Ten" means "Amaterasu," and "Amami" means sake made from rice grown under the sun.
I'm very curious about the pattern on the label. Is it a jewel or something? It is simple, but it also has a modern feeling.
When I first opened it, I felt a little carbonation and a fruity taste like white grapes. There is no alcoholiness or bitterness. It's not too sweet somehow, so it's refreshing to drink.
After a few days, it loses its carbonation and tastes like grapes. Although it is diluted, it is delicious even if you drink it with carbonation.
Because it's a new brewery, I don't think they ship as much as they should. It's very tasty, so I hope it becomes available at various liquor stores.
